Pastry Sous Chef Requirements & Qualifications
- Minimum 6 years of pastry experience within a luxury hotel, resort, or fine dining environment
- Diploma from an accredited pastry or culinary program
- Certified Food Protection Manager Certification
- Strong knowledge of classical and contemporary pastry techniques
- Experience supporting high-volume banquet and a la carte pastry production
- Ability to lead, coach, and mentor pastry team members
- Knowledge of gluten-free, allergy-conscious, and specialty dessert production
- Strong organizational and production planning skills
- Flexible schedule including early mornings, evenings, weekends, holidays, and event-driven business
Pastry Sous Chef Preferred Background & Skills
- Luxury hotel or Forbes/Five-Star resort pastry experience
- Experience supporting large banquet operations and high-profile events
- Strong leadership and team development skills
- Experience creating seasonal dessert menus and luxury amenities
- Knowledge of food cost controls, inventory, scheduling, and production management
