About the Role
The Food Prep Associate is responsible for accepting and organizing ingredient deliveries, preparing ingredients, weighing out mise en place, organizing the kitchen work area, maintaining kitchen cleanliness, and supporting the chef team to ensure the smooth running of the kitchen. This is a detail-oriented role requiring exceptional standards in a fast-paced, high-volume commercial kitchen environment.
What You'll Do
- Prepare vegetables and other ingredients fresh daily — peeling, slicing, dicing, grating, etc. — to the exact weights shown on the production plan
- Weigh out ingredients (mise en place) following the production plan for the chef team to cook, using the correct scales as trained
- Prepare cold mix items including salad dressings, garnishes, and tumbles, strictly following the production plan and keycard instructions
- Conduct visual and taste quality checks on all items as required, assessing freshness of items such as milk, cream, cheese, and vegetables
- Raise quality concerns to kitchen management as they arise
- Perform additional duties as assigned to support business needs, including cooking, labeling, packing, and deep cleaning as trained
Kitchen Operations
- Accept ingredient deliveries, monitor quality and temperature, and put inventory away in its correct storage location, ensuring a tidy and well-maintained kitchen
- Maintain kitchen organization and stock levels of spices, utensils, and disposables to ensure the efficient running of the preparation department
- Follow FIFO stock rotation when receiving and using ingredients
- Label newly opened ingredients in line with the labeling procedure
Food Safety & Compliance
- Conduct start-of-shift and end-of-shift clean-downs in line with trained and documented cleaning standards
- Maintain the highest level of cleanliness, allergen segregation, and food safety standards at all times
- Monitor temperature and quality of incoming deliveries
What We're Looking For:
- Proven ability to follow documented production processes and standardized recipes consistently and precisely
- Strong attention to detail with the ability to maintain quality standards under time pressure during peak service periods
- Physical dexterity working with hands
- Ability to work at speed while maintaining standards
- Fluent in verbal and written English
- Good communication skills
- Basic computer and mathematical skills
- Ability to work independently as well as part of a team
- Calm, rational, patient, and resilient, with the ability to treat others with respect and kindness
- High School Diploma or equivalent
Preferred, but not required:
- Minimum 6 months of experience in a prep position in a commercial kitchen, with skills using knives, scales, and other kitchen equipment
Working Conditions
- Continuous standing and movement throughout shifts of 8–10 hours in a fast-paced commercial kitchen environment
- Frequent exposure to high heat from ovens, grills, and stovetops, as well as cold temperatures when accessing walk-in refrigerators and freezers
- Regular handling of sharp tools, hot surfaces, and heavy equipment; safe work practices must be observed at all times
- Repetitive tasks including chopping, lifting, and stirring performed throughout each shift
- Periodic lifting of up to 50 pounds for receiving deliveries and moving stock
- High-noise, high-pressure environment during peak service periods, requiring sustained concentration and composure
