ABOUT THE POSITION
The Pitmaster position is responsible for smoking, grilling, and preparing barbecue in accordance with daily menu and recipe standards. This role involves a variety of tasks related to smoker/BBQ pit operation, meat preparation, and outdoor equipment maintenance. Essential Responsibilities:
- Ensure food safety standards are followed at all times, including proper temperature monitoring of smoked and grilled proteins.
- Operate, monitor, and maintain smokers, pits, and grills throughout the cooking process.
- Select, trim, season, and prepare meats for smoking and grilling based on recipes and specifications provided by the Chef/Genuine Foods.
- Manage fuel sources (wood, charcoal, gas) and regulate temperature and smoke levels to achieve consistent, high-quality results.
- Monitor cook times and internal temperatures to ensure proper doneness and food safety compliance.
- Coordinate with team members to ensure all barbecue and smoked items are prepared on time for service.
- Maintain a clean working environment, including regular cleaning and upkeep of smokers, pits, and grills.
- Keep area stocked and organized.
- Perform any additional duties as assigned.
Qualifications:
- Must be flexible and team-oriented.
- At least 1 year of experience as a pitmaster, BBQ cook, or in smoker/grill operation.
- Knowledge of smoking techniques, wood/fuel selection, and temperature control.
- Positive attitude, strong work ethic, and level-headedness.
- Punctual and able to adhere to the time and attendance policy.
- Ability to climb stairs, lift up to 50 lbs, and work near open flame and heat sources for extended periods.
- Interest in and commitment to Genuine Foods' mission to use food to enhance students' minds, bodies, and happiness.
- Must be able to work in a school environment.
