Job Title: Bakery Manager

Reports To: Store Manager 

Job Summary

The Bakery Manager is responsible for the day-to-day operation of the supermarket bakery. This includes managing employees, preparing and merchandising bakery products, maintaining food safety and sanitation standards, controlling inventory and costs, providing excellent customer service, and achieving sales and profitability goals.

Key Responsibilities

• Supervise, train, schedule, and evaluate bakery employees.

• Plan daily production based on sales, customer demand, and inventory levels.

• Prepare and oversee the production of breads, cakes, pastries, cookies, desserts, and other bakery products.

• Ensure products are fresh, properly packaged, labeled, priced, and attractively displayed.

• Monitor inventory and order ingredients, packaging, and supplies as needed.

• Control waste, food costs, labor costs, and product shrink.

• Maintain high standards of food safety, sanitation, cleanliness, and personal hygiene.

• Ensure compliance with company policies and local health regulations.

• Handle customer questions, special orders, complaints, and custom cake requests.

• Monitor product quality and take corrective action when standards are not met.

• Set up attractive bakery displays and promotional merchandise.

• Monitor sales and adjust production to meet customer demand.

• Maintain proper records, including production, inventory, waste, and temperature logs.

• Ensure bakery equipment is operated safely and properly maintained.

• Work closely with store management and other departments to meet overall store goals.

• Open and/or close the bakery according to store procedures.

• Lead by example and create a positive, productive work environment.

Qualifications

• Previous bakery, food service, or supermarket experience.

• Previous supervisory or management experience preferred.

• Knowledge of baking, food preparation, and bakery merchandising.

• Strong customer-service and communication skills.

• Ability to train and motivate employees.

• Ability to work in a fast-paced environment.

• Good organizational and inventory-management skills.

• Knowledge of food safety and sanitation requirements.

• Ability to lift, carry, and move bakery supplies and equipment as required.

• Availability to work early mornings, evenings, weekends, and holidays as needed.

Preferred Skills

• Cake decorating and custom cake experience.

• Knowledge of commercial bakery equipment.

• Experience with ordering and inventory systems.

• Understanding of food cost, labor cost, and waste control.

• Basic computer and retail point-of-sale skills.

Working Conditions

This position requires standing and walking for extended periods and working in refrigerated, warm, and production areas. The manager may regularly lift boxes, ingredients, trays, and other bakery supplies.

Bakery Manager — Job Qualifications

• 2–3 years of bakery, food service, or supermarket experience, with supervisory experience preferred.

• Strong knowledge of baking, food preparation, product quality, and bakery merchandising.

• Experience supervising, training, scheduling, and motivating employees.

• Knowledge of food safety, sanitation, and health department requirements.

• Ability to manage inventory, ordering, production levels, waste, and food costs.

• Strong customer service and communication skills.

• Ability to handle customer requests, special orders, and complaints professionally.

• Experience with cake decorating, pastries, breads, cookies, and other bakery products is preferred.

• Ability to operate and safely use commercial bakery equipment.

• Basic computer skills and ability to learn inventory, ordering, scheduling, and point-of-sale systems.

• Strong organizational skills and attention to detail.

• Ability to work independently and make day-to-day operational decisions.

• Ability to work in a fast-paced retail environment while maintaining product quality and customer service.

• Ability to stand for extended periods and lift and move bakery supplies, boxes, and trays.

• Flexibility to work early mornings, evenings, weekends, and holidays as required.

• High school diploma or equivalent preferred; additional culinary or baking education is a plus.
