Sous Chef

Mario’s Seawall Italian Restaurant is looking for an experienced, passionate Sous Chef with strong Italian cuisine training and the ability to lead in a fast-paced, high-volume kitchen.

As Galveston’s oldest Italian restaurant, Mario’s Seawall is more than a place to eat. It is a local tradition built on generations of Italian recipes, handmade pastas, pizzas, classic sauces, and family-style hospitality. Located along the Seawall with a Texas-sized view of the Gulf, Mario’s brings together the romance, flavor, and tradition of Italy in one of Galveston’s most iconic dining settings.

About the Role

The Sous Chef will work closely with the Head Chef and management team to lead daily back-of-house operations, maintain recipe consistency, train kitchen staff, and ensure every plate reflects the quality and history Mario’s is known for.

This role is ideal for someone with strong kitchen leadership experience, a deep appreciation for authentic Italian cooking, and the ability to stay organized and focused under pressure.

Responsibilities

The Sous Chef will help oversee all areas of kitchen operations, including:

• Directing daily food preparation and working closely with the Head Chef
• Executing Mario’s established recipes with consistency and care
• Producing high-quality plates with strong attention to taste, presentation, and timing
• Training, coaching, and supervising back-of-house team members
• Supporting menu planning, specials, inventory, ordering, and supply management
• Maintaining food quality, kitchen cleanliness, and food safety standards
• Keeping stations organized, clean, and ready for service
• Helping schedule kitchen staff and manage shift flow
• Monitoring kitchen equipment and reporting maintenance needs
• Solving problems quickly and professionally during service
• Leading by example and working side-by-side with the team

What We’re Looking For

The right candidate will have:

• Previous Sous Chef, Kitchen Manager, or strong culinary leadership experience
• Training or hands-on experience with Italian cuisine, including pastas, sauces, pizzas, seafood, and classic Italian preparation
• Experience in a fast-paced, high-volume restaurant environment
• The ability to read, memorize, and consistently execute recipes
• Strong time management and organizational skills
• A calm, professional approach under pressure
• A clean, professional appearance
• A coachable attitude and willingness to learn Mario’s recipes, systems, and standards
• Strong communication skills and the ability to work well with a team
• A commitment to food safety, cleanliness, and kitchen discipline
• Reliable work history and excellent professional references

Bilingual English/Spanish communication skills are highly encouraged and preferred.
