Duties
- Prepare a variety of sushi including nigiri, sashimi, maki rolls, and specialty creations with meticulous attention to detail
- Maintain cleanliness and organization of the sushi station in compliance with health and safety regulations
- Source fresh ingredients daily, ensuring quality and freshness for all sushi offerings
- Innovate new sushi recipes and presentation styles to keep menus exciting and engaging
- Collaborate with the kitchen team to coordinate service flow and ensure timely delivery of dishes
- Monitor inventory levels of ingredients and supplies, placing orders as needed to prevent shortages
- Educate junior staff on sushi techniques, knife skills, and presentation standards to foster team growth
Experience
- Proven experience as a Sushi Chef or in a similar culinary role specializing in Japanese cuisine
- Strong knowledge of sushi preparation techniques, knife skills, and ingredient handling
- Experience working in fast-paced restaurant environments with high standards of cleanliness and safety
- Familiarity with sourcing fresh seafood and maintaining proper storage procedures
- Ability to develop creative sushi recipes while adhering to traditional methods
- Previous experience training or mentoring junior kitchen staff is a plus
- Knowledge of food safety regulations and best practices in a professional kitchen setting
