Responsibilities
- Operate and maintain smokehouse equipment to produce premium smoked meats and dishes.
- Oversee the entire smoking process, including preparation, seasoning, and cooking times to ensure optimal flavor and tenderness.
- Develop and refine menu items featuring smoked meats, collaborating with culinary team to create innovative offerings.
- Ensure all food handling practices comply with safety standards and regulations.
- Prepare ingredients for smoking, including trimming, marinating, and seasoning meats.
- Maintain cleanliness of the smokehouse area, adhering to sanitation protocols.
- Train kitchen staff on proper smoking techniques, food safety procedures, and knife skills.
- Assist in food preparation for catering events or special functions as needed.
- Monitor inventory levels of meats, seasonings, and supplies related to smoking operations.
Experience
- Proven experience in food industry roles such as culinary arts, catering, or restaurant service with a focus on barbecue or smoked foods.
- Strong background in food preparation, cooking, and food handling within fine dining or casual restaurant settings.
- Knowledge of menu planning with an emphasis on smoked meats and related dishes.
- Experience in dietary department or dietary aide roles is a plus but not required.
- Skilled in knife handling, meal preparation, and maintaining high standards of food safety.
- Prior experience working in a kitchen environment that emphasizes culinary excellence and customer satisfaction is preferred.
