Apprentice Butcher is responsible for cutting, trimming and scraping of meat and poultry products. The ideal candidate should have experience within a perishable, food or provisional items.
Responsibilities and Working Conditions:
Cut, trim, scrape and boat various cuts of meat or poultry Prepare special cuts of meats ordered by customers Shape, lace and tie roasts, using boning knife, skewer and twine Prepare marinated value-added items, and prepared foods Assist Junior Butcher and Master Butcher in plating of products. Learn from Master Butcher Specialists and Master Butchers to hone your cutting skills and knowledge Estimate requirements and order of requisition meat supplies to maintain inventories Will be responsible for other assigned duties Required to wear oil and slip resistance shoes Must be able to lift up to 50 pounds. In a workday: standing/walking 6-10 hours or more Hand use: single grasping, fine manipulation, pushing and pulling Work requires the following motions: bending, twisting, squatting and reaching Exposure to FDA approved cleaning chemicals, loud noises, flashing lights Constant exposure to temperatures: <-10 degrees Fahrenheit (freezing), 32-40 degrees Fahrenheit (refrigerators)Ability to work in a wet and cold environment Ability to work a flexible schedule including nights, weekends, and holidays as needed Ability to use tools and equipment, including box cutters, electric pallet jacks, and other heavy machinery Ability to work in other areas of the business as needed

Apprentice Butcher is responsible for cutting, trimming and scraping of meat and poultry products. The ideal candidate should have experience within a perishable, food or provisional items.
Responsibilities and Working Conditions:
- Familiarity with retail cuts from all different categories; beef/pork.
- Experience with lamb/veal is a plus
- Apply knowledge of processes involved, production methods, and products to the nuances of everyday operation
- Recognize various cuts, sizes and species of Meat (Skirts, Hangers, Flanks, Belly Meats)
- Ability to read production screens and produce various cuts of meat for retail trade under direction of a Master Butcher
- Use knives and other tools of the trade
- Must be comfortable using band saw and other power equipment used in the trade
- Ability to clearly communicate in English. Bilingual (English/Spanish) a plus
- Ability to work in support of the meat team.
- Competent in following oral and written instructions.
- Understand production equipment care are operation
- Writes clearly and informatively. Is able to read and interpret written information.
- Demonstrates accuracy and thoroughness
- Follows policies and procedures and accepts responsibility for own actions.
- Uses time effectively and efficiently.
- Meets productivity standards. Completes work in timely manner.
