What are the responsibilities and job description for the Catering Chef position at Fresh Plate Catering?
Responsibilities include but are not limited to:
- Prep and cooking of all catering and café foods within needed time frame
- Building and presentation of all catered events
- Managing food quantities
- Managing and tracking of food inventories
- Food Ordering
- Cost management
- Check in orders and compare to list. Confirm correctness. Communicate any differences.
- Ensuring rules are followed at kitchen
- Keeping catering equipment in clean, working condition
- Assistance in menu creation
- Prepares daily production goals and creates daily production schedules
- Ensures daily production schedules are met.
- Oversees deliveries and set-up of caterings. Ensures each catering delivery is complete with all needed utensils, serving items, & foods based on BEO.
- Occasional on-site cooking and food prep
- Managing and hiring of prep & cooking staff
- Ensures kitchen staff follow sanitary guidelines. Directs and holds all staff accountable for proper execution of guidelines.
- Ensures kitchen staff avoid cross contamination, improper food handling and/or storage practices, etc., through proper training and supervision
- Maintains food quality standards
- Manages waste by ensuring recipes and plating guides are followed
- Ensures and oversees portion sizes and portion spec
- Documents recipes and trains staff on the execution of recipes
- Inventory, proper receiving procedures, storage and rotation.
- Oversees the maintaining cleanliness and maintenance of van
Job Type: Full-time
Pay: $50,000.00 - $65,000.00 per year
