Position Summary
Fortu is seeking an experienced, highly motivated Sous Chef to support the Executive Chef in leading day-to-day kitchen operations. As the second-in-command of the kitchen, the Sous Chef ensures the consistent execution of every dish to Fortu's exacting standards, mentors and directs the culinary team, and steps into the leadership role in the Executive Chef's absence. This is a hands-on leadership position for a disciplined, detail-driven professional who thrives in a high-standard, fast-paced fine-dining environment.
Key Responsibilities- Support the Executive Chef in directing all aspects of kitchen operations, ensuring smooth, efficient, and consistent service.
- Oversee daily food preparation, line setup, and expediting to guarantee quality, taste, presentation, and portioning on every plate.
- Lead, train, schedule, and motivate kitchen staff; assist with hiring and ongoing development of the culinary team.
- Assume full responsibility for the kitchen in the Executive Chef's absence.
- Contribute to menu development, seasonal specials, and recipe refinement.
- Manage inventory, ordering, receiving, and proper storage; control food costs and minimize waste.
- Maintain the highest standards of cleanliness, food safety, and sanitation throughout the kitchen.
- Ensure all food handling, storage, and preparation comply with Florida Department of Health and local Pinellas County regulations.
- Monitor equipment, report maintenance needs, and uphold a safe working environment for all staff.
- Minimum of 5 years of progressive culinary experience, including time in a fine-dining or high-volume, high-quality kitchen.
- Prior experience in a culinary leadership role (Sous Chef, Lead Line Cook, or comparable).
- Culinary degree or formal culinary training from an accredited institution preferred.
- Strong knowledge of cooking techniques, flavor development, plating, and kitchen station management; experience with Asian cuisine is a plus.
- Proven leadership, communication, and team-development skills.
- Strong organizational, multitasking, and problem-solving abilities under pressure.
- Keen attention to detail and an uncompromising commitment to consistency and quality.
- Certified Food Protection Manager certification or approved Florida Food Handler certification
