Job Overview
The Culinary Steward position is responsible for maintaining the highest standards of cleanliness and sanitation in the kitchen. This includes washing and properly storing all china, glassware, tableware, cooking utensils, and equipment, using both machine and manual cleaning methods. The role ensures that the dishwashing area and surrounding kitchen spaces remain safe, clean, and organized at all times, supporting smooth kitchen operations and exceptional member dining experiences.
Essential Responsibilities
Major Responsibilities
Primary duties include, but are not limited to:
Dishwashing & Cleaning
- Sort and rinse dirty dishes, glassware, utensils, and cookware, loading them into dish machines or washing them manually as needed.
- Sort, stack, and deliver clean dishes to appropriate storage areas, ensuring proper organization.
- Rewash soiled dishes as necessary to maintain cleanliness standards.
- Change dish machine water regularly (at least once per hour) and ensure proper chemical usage.
- Assemble and disassemble dishwashing equipment for cleaning and maintenance.
- Hand-wash pots, pans, and trays as required.
- Wipe up spills immediately to maintain clean, dry, and safe kitchen floors.
- Monitor dish machine wash and rinse cycles, notifying management if safety temperature standards are not met.
Kitchen & Facility Maintenance
- Set up and break down the dishwashing station at the beginning and end of shifts.
- Clean and roll/unroll floor mats as needed.
- Sweep and mop kitchen floors and maintain general kitchen sanitation.
- Fill and empty soak tubs with appropriate cleaning and sanitizing solutions.
- Remove trash and recyclables, transporting them to designated dumpsters.
- Sweep trash and debris around the exterior of the kitchen and dumpster area.
- Perform general cleaning of kitchen, restaurant, and restrooms as directed.
Safety & Compliance
- Follow all sanitation and safety protocols to ensure compliance with health department regulations.
- Maintain proper personal hygiene and wash hands frequently.
- Never handle clean dishes after touching dirty dishes without washing hands first.
- Use chemicals safely and read all labels carefully.
- Report any safety concerns, broken equipment, or hazards to management immediately.
Qualifications & Requirements
- Ability to read, understand, and follow instructions and labels on cleaning chemicals.
- Familiarity with basic workplace and kitchen safety procedures.
- Strong attention to detail and ability to work quickly and efficiently.
- Ability to work well independently and as part of a team.
Physical Demands & Working Conditions
- Must be able to walk and stand for the entire shift.
- Lift and carry racks, stacks of dishes, and utensils weighing up to 30 lbs., up to 50 times per shift.
- Lift and empty trash cans weighing up to 150 lbs. with assistance, up to two times per shift.
- Frequent bending, stooping, reaching, pushing, and lifting throughout the shift.
- Work performed 80% indoors and 20% outdoors.
- Potential hazards include cuts, burns, slips, and trips.
- Frequent washing of hands required.
