Duties
- Prepare and assemble a variety of sushi, sashimi, and other Japanese dishes with precision and artistry
- Maintain high standards of cleanliness, food safety, and sanitation in all work areas
- Develop new sushi recipes and presentation styles to keep offerings fresh and exciting
- Manage ingredient inventory, ensuring freshness and proper storage of seafood, rice, vegetables, and other supplies
- Collaborate with team members to ensure timely service during busy hours
- Educate junior staff on sushi techniques, presentation, and safety procedures
- Monitor quality control throughout the preparation process to ensure consistency and excellence
Requirements
- Proven experience as a Sushi Chef or similar culinary role specializing in Japanese cuisine
- Strong knowledge of sushi preparation techniques, including fish filleting, rice cooking, and knife skills
- Ability to develop innovative sushi recipes and adapt to menu trends
- Excellent understanding of food safety standards and sanitation practices
- Experience managing ingredients inventory and minimizing waste
- Ability to work efficiently under pressure in a lively environment
- Passion for culinary arts with an eye for detail and presentation
Preferred qualifications include culinary training or certifications related to Japanese cuisine or professional cooking. Experience working in diverse kitchen settings, including fine dining or high-volume restaurants, is highly valued. A background in classroom management or teaching culinary techniques can be an asset for mentoring junior staff.
