What are the responsibilities and job description for the Pastry Assistant position at Firebrand Artisan Breads?
Mixing - Scaling/measuring/weighing and competently mixing raw ingredients to make doughs. Divide dough to store in individual containers and successfully follow provided recipes. Must be able to lift 50 pounds unassisted.
Molding - Competently shape, cut and weigh dough and place products into molds for fermentation. Must be able to competently use baking equipment on the production floor. Must be able to read and follow recipes. Must be able to lift 50 pounds unassisted.
Bread/Pastry Rising - Must be able to roll a raca of product weighing up to 50 lbs. in the proofing or retarder box. Must be able to tolerate different types of environments from high humidity to freezing cold. Must be able to lift 50 lbs. unassisted.
Bakery - Competently bake bakery products with the use of a Llopis Oven or Rack and Pinion Oven. Must be able to follow instructions and use bakery ovens. Must be able to handle high heat environments. Must be able to lift 50 pounds unassisted.
Preparation - Competently able to use a meat slicer, pastry sleeves, make fillings, custards, must be able to use a stove, follow standardized recipes. Must be able to lift 50 pounds unassisted.
Sanitation/Food Safety - Must acquire a food handler's license, clean and sanitize work stations and around work station and equipment.
Qualifications
- You’re 18 years or older
- Can lift 50 lb bags of flour
- Can work on your feet for at least 8 hours
- Are available to work holidays and weekends
- Are legally eligible to work in the US
- Can make it to work consistently and on time, hours are 5 am to 1:30 pm
