Butcher at Mamani

Mamani, the newest restaurant from the Dallas-based hospitality group FLHO, features French cuisine with an Italian accent from Executive Chef Christophe De Lellis. The cooking is approachable, celebrating simplicity, clarity of flavor and the excellence of the ingredients. Co-owners (and FLHO principals) Brandon and Henry Cohanim drew inspiration for the project from their French-born grandmother, whom they fondly call “Mamani.” Paris-born chef De Lellis brings inspiration from his food-loving grandparents as well; all four are Italian. Mamani is the flagship restaurant for the new Quad development in Uptown.

Job Summary:

We are seeking a reliable and motivated Butcher to support our kitchen team during the morning shift. The ideal candidate will focus on cleaning and fabrication of multiple different proteins, including the preparation of ingredients, receiving and organizing deliveries, and ensuring that the kitchen is well-stocked and ready for service. While experience in a butcher role is preferred, a strong work ethic and attention to detail are most important.

Key Responsibilities:

· Prepare ingredients according to recipes and guidelines.

· Receive, inspect, and organize product deliveries, ensuring all items meet quality standards.

· Maintain inventory levels by properly storing and rotating products to minimize waste.

· Assist in the preparation of stocks, sauces, and other foundational elements for the kitchen.

· Keep the kitchen clean, organized, and well-stocked for the day’s service.

· Operate kitchen equipment safely and efficiently, including slicers, mixers, and ovens.

· Adhere to all health and safety regulations and ensure proper food handling procedures.

· Support the kitchen team with additional tasks as needed during the shift.

Qualifications:

· Previous experience in a kitchen, especially in a prep cook role, is preferred but not required.

· Strong organizational skills and attention to detail.

· Ability to work independently and as part of a team in a fast-paced environment.

· Physical ability to lift heavy items and stand for extended periods.
