Description
Rosella Sushi, a sustainable and innovative sushi restaurant in the heart of Kennebunkport, is seeking an experienced and motivated Lead Server to join our team. This is a key front-of-house role for someone who is passionate about hospitality, thrives in a fast-paced environment, and enjoys leading by example.
Essential Job Functions
- Leads the service staff, including servers, hosts, and support staff during daily and nightly shifts, while taking a maintaining a section of guests of their own.
- Create effective, cost-efficient schedules for assigned F&B team based on forecast and budget in conjunction with the Director of F&B.
- Responsible for initial and continued training of the front of house service staff, including adherence to uniform/appearance policy, service training, POS systems.
- Communicates any employee issues such as time and attendance policy, job performance, etc. to the Director of F&B.
- Completes beverage program ordering on a weekly basis. Includes all liquor, beer, wine, non-alcoholic beverages, and items to be used in cocktails. Maintains appropriate stocking, organization and pars of said items.
- Lead daily pre-meals/stand-up meetings, developing topics to discuss such as operational focuses, safety issues, in-house VIPs, specials, food and beverage education, guest feedback, etc. Provide proactive communication of all standards to staff.
- Ensure compliance with all F&B operational procedures. Work with KRC Senior F&B Director on development of SOPs as needed.
- Update POS with pricing, specials, menu changes, etc.
- Intentional guest engagement through “touching tables” and ensuring guest satisfaction at all times.
- Assist kitchen staff with expediting of food, ensure service staff is assisting to run food and prepare takeout when possible.
- Responsible for bar program, creating cocktail lists, determining wine and beer offerings, connecting with new vendor options, pricing out beverages, and oversee requisition of liquor and adherence to beverage standards.
- Complete server shift closing procedures such as ensuring all checks are closed, collect cash deposit, collect server cash tips, count change bank accurately, collect server receipt cash outs, ensuring they are placed into the safe in manager office.
- Coordinate workflow to ensure a smooth-running operation.
- Assist team members as needed and as much as possible to promote a positive teamwork environment.
