The Tides Inn is a beloved waterfront, luxury resort nestled on Carter’s Creek in Irvington, Virginia. The property has been a cherished destination for generations and has recently undergone a number of renovations and enhancements that are helping elevate the brand and overall experience. The Tides features 70 luxurious accommodations, tennis and pickleball courts, wellness treatments, a working farm, Markers Space (for artistic activities), its own marina and two distinct restaurants, Salt & Meadow Restaurant and Fish Hawk Oyster Bar. Job Summary
Accountable for the overall success of the pastry and dessert items produced daily in our newly renovated kitchen, which includes an Athanor suite. The Pastry Cook is responsible for the daily preparation, organization, tasting, cleanliness, and creativity of all pastry and baked goods, utilizing ingredients from our 5-acre farm while ensuring superior quality, consistency, and presentation.
Essential Functions and Responsibilities
Regular and reliable attendance is an essential function of this role.
Responsible for the preparation, production, and presentation of all pastries, desserts, breads, and baked goods across all outlets, including but not limited to the Dining Room, IRD, Amenities, Fish Hawk, and Banquets.
Maintain the highest standards of freshness, quality, and visual appeal for all pastry items on your station.
Assist the Pastry Chef and culinary team in maintaining daily production logs and waste tracking.
Prepare pastry items daily based on anticipated business levels and event needs.
Properly handle, store, and label all ingredients and finished products in accordance with food safety standards.
Follow standardized recipes to ensure consistency in taste, texture, and presentation while maintaining proper portion control.
Minimize waste and ensure proper product utilization in coordination with the Pastry Chef and Sous Chefs.
Participate in tastings with the chef team for new dessert concepts, seasonal offerings, and menu development.
Maintain cleanliness and organization of the pastry station, kitchen equipment, and surrounding work areas in accordance with sanitation standards.
Collaborate with the farm team and visit the Tides Inn Farm on a weekly basis to stay informed of seasonal ingredients and incorporate them into pastry offerings.
Support special projects, seasonal events, and custom dessert production as assigned.

Qualifications
High school diploma or equivalent vocational training certificate.
2 years of experience in a pastry or baking role in a 4- to 5-star hotel, resort, restaurant, or bakery.
Working knowledge of pastry techniques including baking, decorating, chocolate work, and plated desserts.
Ability to perform basic mathematical calculations for recipes and measurements.
Ability to work across multiple stations within the pastry department.
Food handler certification required.
Ability to communicate effectively in English, both verbally and in writing.
Ability to work well under pressure in a fast-paced environment.
Current, valid driver’s license required.
