Overview
Responsible for the overall success of the outlet, meeting or exceeding planned objectives for revenue and profit, and ensuring guest satisfaction and product quality standards are met. Manages all areas of the outlet in accordance with brand standards to achieve a friendly atmosphere of superior guest service and product quality. Provides exemplary performance for staff to follow.
DUTIES AND RESPONSIBILITIES:
- Motivating a large group of team members to deliver service standards.
- Driving sales and marketing strategy.
- Meeting budgets and exceeding revenue targets.
- Networking at dinners and functions.
- Liaising closely with the sales and revenue team to make sure business is coming in at the right price.
ESSENTIAL JOB FUNCTIONS:
- FINANCIAL
- Responsible for maximizing revenues and flow through to GOP to meet or exceed budgeted EBITDA.
- Responsible for preparation of property budget and forecasts.
- Manages labor standards and property level expenses to achieve maximum flow through to the bottom line profit.
- Explains and manages financial activities. Reconcile all financial accounts.
- Monitors collection of in-house guest balances and direct bill receivables, commission payments by vendors and issuance of refund checks.
- Participates and monitors monthly inventory of supplies and equipment. Ensures purchases made are within budget and by approved vendors.
- SALES
- Works with BOD to manage all sales activities of the business unit and meet revenue objectives. Activities include setting goals, completing competitive surveys, taking reservations ROI, compiling and analyzing reports.
- Identifies and seeks out potential business in local market. Maintains relationships with local companies and key people to increase EHG’s visibility within the local market.
- Networking during operational and social hours to assist sales in uncovering new business leads.
- Stay current on local market conditions.
- OPERATIONS
- Efficient operation and cost control of outlet and facilities.
- Food and beverage consistently maintained to standards of quality, innovativeness, service and presentation. Energy consumption is monitored and minimized
- Provide a safe working environment in compliance with government requirements.
- Ensure adherence to relevant legislation relating to: fire; hygiene, employment, licensing, etc.
- Audit to ensure public spaces, grounds, work and kitchen areas meet sanitation and cleanliness standards.
- Audit preventive maintenance and general clean program so that guest satisfaction goals are attained.
- Attend all regional training seminars as outlined by the Corporate Office.
- Identify trends and make recommendations for improvements.
- ADMISTRATIVE
- Ensure proper hiring practices and strive for a culturally diverse work place.
- Promote both Guarantee of Fair Treatment and Open Door policies.
- Use constructive coaching and counseling when addressing associates’ concerns.
- Maintain current licenses and permits as prescribed by local, state and federal agencies.
- Have working knowledge of all corporate brands manuals.
KEY ATTRIBUTES:
- Degree in business related field preferably with MBA and other industry centric qualifications.
- Must have at least 3-5 years experience in managing exclusive restaurants and high-volume nightclubs.
- Absolutely sound with financials (budgets, P&L).
- Able to recruit, lead and motivate the staff.
- Highly stable work background.
- Decisive VIP ambassador.
- Excellent communications skills.
- Strong business acumen and excellent knowledge of latest sales and marketing trends.
- Outstanding ability to motivate and train teams to achieve goals and KPIs.
