What are the responsibilities and job description for the Expeditor position at El Arroyo?
EXPO DUTIES AND RESPONSIBILITIES
As the restaurant´s expo, your job is key to the flow and service of excellence that we are aiming to achieve. You keep the kitchen in continuous motion and help the servers give excellent service. Be mindful of the following:
- Keep the expo window and surrounding area clean and always wiped down. Food runs through this area and we should be following Health Department Standards. Also, an organized station makes the job efficient and fluent.
- Make sure all To Go items are fully stocked
- All plates have clean rims and look presentable
- Ensure that all plates are complete and correctly plated before going out to the table(s)
- Help deliver chips and salsa. When refilling chips and salsa bring a new basket and new bowl of salsa.
- Help deliver water to tables and silverware when there is no host.
- Before you start running food to a table make sure the table is ready by pre-bussing unused dishes, glasses, baskets and trash. Make sure the guests have silverware.
- Help keep chips warmer full.
- Help keep floor clear of trash
- Look around the restaurant and see if you could pre-buss tables (empty plates, silverware, glasses and trash).
- Keep the tortilla bin full (1 package of corn tortillas and the rest with flour tortillas. Always rotate the product)
- Help keep the chip baskets lined with paper
- Run food without auctioning. Servers are ringing food in starting at position 1, which is the first guest sitting at the left while your back is towards the main door of the restaurant.
- Make sure to run first the sides of the fajitas. Skillet goes last. They must be sizzling when they arrive at the table.
- Spoons always go on the side of the dishes except with beans, where they go inside.
- If a dish is brought back for any reason do not take it back into the kitchen through the window. The window is exit only. Bring back dishes through the kitchen entrance.
- RESTOCK any monkey dishes for salsa and chips baskets from the dishwasher, large, medium and side plates.
- This does not limit your duties. Everyone’s job is everyone’s job. Your manager may ask you to do some other tasks if there is no other support staff.
