Position Overview
We are seeking a an experienced, high energy, and driven Bakery Operations Manager to direct the execution of daily production in our high-volume, 24-hour commissary bakery. This front-line management role is responsible for ensuring that all processes, standards, and schedules set by the Commissary Director are followed with quality and consistency.
The Bakery Operations Manager will directly supervise production and distribution staff on shift, reinforce food safety and quality standards, and help maintain a smooth, productive, and clean work environment. This role is ideal for someone with bakery or food manufacturing experience who thrives in a fast-paced setting and takes pride in keeping teams accountable, organized, and on task.
Key Responsibilities
Daily Execution & Oversight
- Manage day-to-day shift activities across baking, batching, packaging, decorating, and sanitation.
- Ensure all schedules, workflows, and quality expectations set by the Commissary Director are carried out effectively.
- Communicate clearly with shift teams to reinforce production priorities and timelines.
Team Supervision & Accountability
- Supervise and direct production employees during daily operations.
- Promote a clean, organized, and focused work culture.
- Provide in-the-moment coaching, redirection, and performance documentation as needed.
- Lead shift start-up and end-of-day routines (pre-checks, shift handoff, etc.).
Food Safety & Cleanliness
- Enforce all HACCP, GMP, allergen, and sanitation protocols established by the Commissary Director.
- Monitor and correct any non-compliant behavior or conditions immediately.
- Complete regular quality and cleanliness checks during production.
Communication & Reporting
- Communicate shift performance, staffing issues, quality concerns, and equipment needs directly to the Commissary Director.
- Help escalate and resolve urgent issues with urgency and clarity.
- Ensure accurate shift logs, batch logs, and production checklists are completed and turned in.
Training & SOP Enforcement
- Train new team members using established procedures and guidelines.
- Ensure all team members are working in alignment with SOPs, safety standards, and company values.
- Help onboard new hires in coordination with the Commissary Director and HR.
Qualifications
- 2 years of experience in a bakery, food production, or manufacturing environment
- 5 years of operations management
- Strong communication and leadership presence on the production floor
- Working knowledge of food safety best practices (HACCP, GMPs, etc.)
- High attention to detail and strong organizational skills
- Ability to lead by example and hold others accountable
- High school diploma or GED required; post-secondary training or food safety certifications a plus
