Position Summary
The Bakery Manager is responsible for the leadership and daily operation of the Bakery Department. This position oversees bakery production, merchandising, inventory, staffing, food safety, and financial performance while ensuring exceptional product quality and customer service. The Bakery Manager is accountable for department sales, profitability, labor, inventory, and shrink and is responsible for maintaining a clean, efficient, and customer-focused bakery.
Essential Responsibilities
· Deliver outstanding customer service by assisting customers with product selection, special orders, and custom bakery requests.
· Ensure customer concerns and requests are handled promptly and professionally.
· Promote a welcoming environment that encourages repeat business and customer loyalty.
· Direct all daily Bakery Department operations.
· Supervise on-site bakery production, baking, packaging, decorating, and merchandising activities.
· Ensure bakery displays remain attractive, fully stocked, and properly rotated throughout the day.
· Monitor product quality and determine which products meet Eddie's quality standards and which should be returned or discarded.
· Maintain department cleanliness and sanitation in accordance with company and regulatory standards.
· Receive deliveries, inspect products for quality and accuracy, verify invoices, and maintain receiving documentation.
· Develop seasonal, promotional, and holiday bakery displays.
· Plan production schedules based on sales trends and customer demand.
· Select vendors, evaluate product quality and pricing, and maintain vendor relationships.
· Determine product assortment and ordering quantities for daily and seasonal business.
· Conduct quarterly inventory counts and maintain accurate inventory records.
· Maintain holiday production schedules and ordering records.
· Ensure pricing and signage are accurate and current.
· Maintain accountability for department sales, gross profit, labor, inventory, and shrink.
· Analyze department performance and implement strategies to improve profitability.
· Control production costs while minimizing waste.
· Recommend new products and merchandising opportunities to increase sales.
· Leadership & Team Development
· Recruit, interview, hire, train, schedule, supervise, and develop Bakery associates.
· Establish daily work priorities and maintain standard operating procedures.
· Conduct performance evaluations and provide coaching and corrective action when necessary.
· Partner with Store Management and Human Resources regarding employee performance, promotions, disciplinary actions, and terminations.
· Promote teamwork, accountability, and outstanding customer service.
· Attend department and management meetings.
· Ensure compliance with all food safety, sanitation, labeling, and OSHA regulations.
· Maintain proper temperature logs, cleaning schedules, and production records.
· Train associates in proper food handling procedures and Maryland Weights and Measures requirements, including tare weight calculations where applicable.
· Ensure all department documentation is completed accurately and on time.
Qualifications
· High school diploma or equivalent required.
· ServSafe Food Manager Certification preferred or the ability to obtain certification within six months of hire.
· Minimum of five years of commercial or retail bakery experience.
· Minimum of two years of supervisory or management experience.
· Experience managing bakery production, merchandising, inventory, and financial performance.
· Extensive knowledge of bakery production, including breads, rolls, cakes, cookies, pastries, pies, tarts, Danish, and seasonal specialty products.
· Strong leadership, communication, and organizational skills.
· Experience with production planning, ordering, inventory control, and shrink reduction.
· Ability to analyze sales and financial reports.
· Ability to lift up to 20 pounds regularly and stand for extended periods.
· Flexible schedule, including early mornings, evenings, weekends, and holidays.
