What are the responsibilities and job description for the Front and Back of house positions position at Eat Your Heart Out Catering, LLC?
Our primary focus is backstage catering: providing breakfast, lunch, and dinner for touring bands that have shows in Minnesota. Food is prepared on-site at our kitchen located in the State Fair Grounds, and served at the venue on the day of the concert. We have catered many shows at The Armory, Xcel Center, Orpheum and State Theatres. We also cater for the Grandstand headliners at the State Fair each year, along with may other local festivals.
The BOH jobs consist of prepping for shows around two days in advance, and cooking meals day of. The menu changes based on what the bands request, so some diversity in cooking experience is helpful. We make everything from scratch. Prep. days are usually around 8 hours long: something like 9:00am - 5:00pm. On event days, breakfast preparation typically starts around 6:00am, and dinner begins at 5:00pm. We usually divide longer days like this into two shifts.
FOH roles include onsite service for breakfast, lunch, and dinner. Those onsite will facilitate set-up, break-down, and changeover, as well as serve guests as they walk through the service line. FOH shifts are 7-8 hours: either an AM or PM shift.
From April to November we are very busy, and things slow down a little after mid-December, so there is a little seasonality in the job.
