SUMMARY OF JOB DESCRIPTION:
Under supervision of the Director, administer; plan; manage; and supervise cafeteria, bakery and central delivery services according to Federal-, State-, and District-mandated policies and regulations, including the National School Lunch, Free and Reduced Lunch Programs, and School Breakfast Program.

SUPERVISES: Cafeteria Managers, Cooks, Delivery Drivers, and Substitute Staff
ESSENTIAL JOB ELEMENTS:
- Supervise food quality standards related to good nutrition, taste, and appearance and that all food operation procedures are carried out according to the Federal requirements of the National School Lunch Program and School Breakfast Program; provide direction and guidance to kitchen staff
- Serve as the Executive Chef of the school district; including development of culinary training programs, staff culinary skills development, standardization of recipes and development of new menu ideas
- Perform as the primary Substitute Cafeteria Manager/Chef, with all the duties and responsibilities therein; thus saving valuable department resources. Manage substitute employee pool including cooks and managers
- Plan and design menus consistent with CDE guidelines; assist the Director of Nutritional Services in menu item pricing
- Monitor and evaluate data gathering systems (i.e., cost per meal, lunch counts, etc.), including monitoring and evaluating cash collection systems; recommend cost control measures
- Assist the Director of Nutrition to ensure food, bakery, and central delivery services are provided in an efficient and cost-effective manner; including personnel utilization, equipment selection and maintenance, food specifications, and food and supplies
- Assist the Director of Nutrition in the management of Free and Reduced (F&R) Lunch program audits, Colorado Department of Education (CDE) direct certification for the F&R program; perform CDE verification of applications, and maintain F&R computer software
- Manage systems and procedures for the preparation, delivery, storage and serving of food
- Prepare food service reports required by the CDE
- Interview, recommend for hire, train, evaluate, discipline, and terminate staff; including but not limited to Cafeteria Managers, Cooks, and Substitute Cooks; mediate employee disputes; review accident/incident reports and take action in accordance with District policy
- Ensure proper sanitation and safety protocols are followed in all cafeterias in accordance with all local and state health laws
- Ensure security of all inventory and equipment and provide monthly and year-end written inventories
- Communicate with food service staff, district and school administration, faculty, students, and parents to promote efficient and effective coordination of food service operations; meet with stakeholder groups as needed to advance the food service program
- Monitor the operation of the computer system, software, hardware, and staff training; coordinate system upgrades, software revisions, and student downloads
- Perform other duties as assigned by the Director of Nutritional Services

QUALIFICATIONS:
- Associates Degree in Culinary Arts or related field
- Three years of increasingly responsible high-volume food service experience
- One year of experience in food preparation and production in a child nutrition operation
- Servsafe certification
- Computer skills: keyboarding, nutritional, and accounting software
- First Aid and CPR training
