LINE COOK – BANQUETS & CATERINGPOSITION SUMMARY

The Line Cook – Banquets & Catering is a key member of our culinary team, responsible for preparing high-quality dishes for our restaurant outlets while also executing plated banquet meals, buffets, and catered events with consistency, speed, and precision.
This role blends à la carte line cooking with high-volume banquet production. The ideal team member is energized by a fast-paced kitchen, takes pride in clean technique and beautiful plates, and embodies Hilton’s commitment to hospitality at every step — from the prep table to the banquet line.
ESSENTIAL DUTIES & RESPONSIBILITIES
Line / À La Carte Cooking
- Prepare menu items for breakfast, lunch, dinner, and in-room dining service according to DoubleTree recipes, plating guides, and brand standards.
- Set up and break down stations (sauté, grill, fry, cold/pantry) with proper mise en place before each service period.
- Cook to order with accuracy, consistency, and speed while maintaining presentation and portion control.
- Communicate clearly with servers and culinary leadership to ensure timely, accurate ticket execution.
Banquets & Catering Production
- Execute plated banquet meals, action stations, buffets, and break service in accordance with Banquet Event Orders (BEOs).
- Partner with the Banquet Captain and Sous Chef to coordinate timing for plated service of 50–300 guests.
- Batch-cook proteins, starches, vegetables, and sauces to volume while preserving quality, temperature, and presentation.
- Build and stage buffet platters, chafing dishes, and display pieces that meet Hilton brand visual standards.
- Adapt quickly to last-minute menu changes, guest dietary requests, allergens, and VIP needs.
Quality, Safety & Sanitation
- Maintain full compliance with Hilton brand standards, the Hilton CleanStay program, OSHA, and Orange County Environmental Health requirements.
- Follow HACCP procedures for food handling, cooling, reheating, labeling, dating, and rotation (FIFO).
- Keep all work areas, equipment, walk-ins, and storage spaces clean, organized, and audit-ready at all times.
- Report equipment issues, product shortages, or safety concerns to the Chef on duty.
Teamwork & Brand Service Culture

- Support team members across stations and outlets, including assisting stewarding during peak banquet flips.
- Participate in pre-shift line-ups, BEO reviews, and ongoing training initiatives.
QUALIFICATIONS & EXPERIENCE
- Minimum 1–2 years of line cook experience in a full-service hotel, restaurant, or catering operation; banquet experience strongly preferred.
- Working knowledge of classical cooking techniques, plating, and standardized recipes.
- Ability to read and execute BEOs and follow plating diagrams.
- Valid Orange County (or California) Food Handler Card required; ServSafe certification preferred.
- Culinary school training or equivalent professional kitchen experience preferred.
- Strong communication skills; bilingual English/Spanish a plus.
- Authorization to work in the United States.
PHYSICAL REQUIREMENTS
- Ability to stand, walk, bend, and reach for the duration of an 8-hour shift.
- Frequently lift, carry, push, or pull up to 50 lbs (stockpots, sheet pans, banquet trays, dish racks).
- Tolerate exposure to hot kitchen environments, walk-in coolers/freezers, steam, smoke, and standard kitchen chemicals.
- Manual dexterity to safely operate knives, slicers, mixers, ovens, grills, fryers, and other kitchen equipment.
