POSITION OVERVIEW:
As a technician, the expectation is that you actively strive towards Food Safety, Quality & Regulatory Compliance and to help to implement a food safety culture within the Organization by interacting in a positive manner with cross-functional team members. Perform all tasks objectively and honestly while reporting any concerns to the appropriate management team member.
KEY RESPONSIBILITIES:
· Support the FSQA manager on monitoring and documentation of Quality System including procedures, records, Good Manufacturing Practices (GMPs), Hazard Analysis Critical Control Points (HACCP), Preventative Controls (PCs), Sanitation Standards Operating Procedures (SSOPs)
· Performing pre-operational procedures, environmental monitoring as applicable.
· Support on executing corrective actions from USDA observations, Audit preparations (SQF When applicable). Also, support FSQA manager on items shared by the FSQA Advisor.
· Conduct daily walkthroughs of all the rooms in the facility on the following frequency (minimum): At the beginning of the shift, before break, during employee break, after break, before the shift ends. The goal is to observe potential Food Safety issues, quality issues, GMP compliance, and housekeeping.
· Monitor the Quality and appearance of the product. Support the FSQA manager on the execution and implementation of good Quality standards.
· Evaluate daily conditions of product, packaging materials, spices, raw materials. Look for: wholesomeness, integrity, quality and food safety conditions.
· Evaluate daily conditions of equipment, worktables, tools, knives. Look for wholesomeness, cleanliness, and usage.
· Provide feedback and maintain open communication with the production and operational team supervisors. Report issues and deficiencies to management immediately.
· Communicate openly all challenges, issues, and concerns to FSQA manager. In the absence of the FSQA manager please communication with the Plant Manager and the FSQA Adviser.
· Look for trends in daily data: Pre-op repetitive issues, Sanitation repetitive findings. Communicate the findings to the FSQA manager.
· Maintain records accurately.
· You should be very well versed in HACCP, able to identify CCPs and able to detect Non conformances. NCs should be communicated to the FSQA Manager
· Look for maintenance tools, parts, or other articles left in the processing floors that are not part of an active repair.
· Monitoring traffic controls between rooms as well as coat changes when entering the RTE room.
· Weekly walkthrough outside the Facility (building and grounds) with FSQA manager– Look for status of the pest control traps, trash, unsafe and unsanitary conditions.
· A member of the FSQA tech team should stay at once per week to observe Sanitation practices and to find gaps that will benefit the process and enhance performance.
· A member of the FSQA team should stay in the facility when special projects, situations or as requested/required per management: construction, testing, swabbing, following up on open items, audit preparation, certification preparation, closure of non-conformities, etc.
· Label verification should be done at every order/lot. The label should match the item in the box and should contain all the necessary and accurate information.
· FSQA techs and team members SHOULD act responsibly, honestly, and straight forward. Acts of bad temperament, violence, altercations, loud voices, disrespect for others and horse playing won’t be tolerated.
· FSQA Techs have the responsibility to represent the department and the organization in a respectable way.
QUALIFICATIONS:
• High school diploma or equivalent; post-secondary education in food science, animal science, or related field preferred.
• 1–2 years of experience in meat processing or food safety/quality assurance.
• Working knowledge of USDA regulations, HACCP, GMP, and SSOP protocols.
• Strong attention to detail and ability to follow strict procedures.
• Proficiency in Microsoft Office and data entry systems.
• Ability to work in cold environments and handle raw meat products.
• Effective communication and teamwork skills.
