Job Description
Supervises activities associated with the assembly and delivery of meals for inmates in Dallas County facilities. Supervises the following activities: Dish Room, Floor Security, transporting of meals, and laundry services. Coordinates with supervisors of Dallas County Facilities Management Department for routine and daily preventive maintenance and repairs of equipment. Coordinates with the Automotive Service Center supervisors for preventive maintenance and repair of six trucks and one van. Manages budget of approximately $850,000.
Management Scope: Supervises a staff of approximately 40 that includes one Sergeant, five Cooks and Detention Service Officers and inmates. Functions as Division Commander in absence of the Captain.
Responsibilities
Education, Experience and Training:
Education and experience equivalent to a Bachelor’s degree from an accredited college or university in a job related field of study. Three (3) years experience in an institutional food service operation (correctional, military, hospital, school or school district), serving a large clientele of approximately 1,000, with one (1) year supervisory experience required.

Food Service Safety certification and HACCP training
Physical/Environmental Requirements
Standard office environment within a secured facility. Some exposure to heat and cold temperatures.

Responsibilities
- Supervises the assembly operations of meals for 6,500 inmates and 600 juveniles and delivery of those meals to the appropriate facilities. Coordinates a tray production cycle.
- Coordinates with Jail Facility Commanders and the Juvenile Department’s Facility Assistant Director, on a daily basis, to determine number of meals to be delivered to facilities.
- Supervises a staff of approximately 40. Trains, evaluates, disciplines and coaches staff as needed.
- Coordinates with the Automotive Service Center for maintenance and or repair of the fleet that consists of six trucks and a van. Ensures that vehicles are operational at all times.
- Manages Central Laundry services for five jails and the Henry Wade Justice Center. Ensures that services are provided 7 days per week and that equipment is operational at all times.
- Oversees the maintenance of all tray assembly and related issues.
- Supervises and coordinates the delivery of laundry to five adult jail facilities and six Juvenile facilities.
- Manages the budgeting, staffing and acquisition of equipment for tray assembly operations.
- Performs other duties as assigned.
