What are the responsibilities and job description for the Baker position at Cucina Alba - NYC?
ALBA is looking for an experienced baker to join our bread and pizza program. This is a hands-on production role for someone who takes pride in craft and consistency — equally at home shaping loaves at dawn and stretching dough on the line. You'll work under the direction of our senior kitchen team to execute the program to a high standard day in and day out.
What you'll do
- Execute our daily bread production: mixing, fermentation, shaping, proofing, and baking to spec
- Produce pizza doughs to our standards, with attention to hydration, fermentation, and texture
- Feed and maintain natural starters; monitor fermentation across changing conditions
- Hit daily par levels and follow the production schedule set by the team
- Work the oven like a pro
What we're looking for
- 3 years of professional baking experience
- Solid command of bread fundamentals: fermentation, dough development, shaping, and bake
- Hands-on experience with pizza dough a plus
- Reliability and consistency under a daily production schedule
- Ability to lift 50 lbs and stand for extended periods
