General Manager – Slaughterhouse & Meat Fabrication Plant
Position Summary
Creek Ranch Meat Processing LLC is seeking an experienced General Manager to oversee day-to-day operations of a USDA-inspected halal slaughter and fabrication facility specializing in goat and small ruminant processing. This role owns plant performance end-to-end — production, quality, compliance, labor, procurement, and P&L — and reports directly to ownership.
Key Responsibilities
- Oversee all slaughter and fabrication operations, ensuring consistent throughput, yield, and product quality
- Maintain full USDA compliance, including HACCP plans, SSOPs, and readiness for inspector visits and audits
- Uphold halal certification standards and protocols throughout the slaughter and processing chain
- Manage livestock intake and coordinate with auction house suppliers on scheduling, grading, and receiving
- Supervise and schedule a workforce of approximately 15 plant employees, including hiring, training, and performance management
- Manage weekly payroll processes and labor cost control
- Oversee equipment maintenance, sanitation programs, and facility upkeep
- Monitor and report on production KPIs: kill counts, yield percentages, cut ratios, waste/shrink, labor cost per unit
- Manage relationships with wholesale and export buyers; support domestic and international order fulfillment
- Enforce food safety, workplace safety (OSHA), and environmental compliance standards
- Manage inventory of livestock, finished product, packaging, and supplies
- Support cost control and budgeting; report financial and operational performance to ownership
- Coordinate with USDA inspectors, auditors, and regulatory agencies as the primary plant liaison
- Identify and implement process improvements to increase efficiency, reduce waste, and improve margins
Required Qualifications
- 5 years of management experience in a USDA-inspected meat processing, slaughter, or fabrication facility
- Working knowledge of HACCP, SSOP, and USDA-FSIS regulatory requirements
- Experience with halal slaughter protocols and certification requirements strongly preferred
- know to use ERP like SAP and etc
- Proven track record managing production staff (hourly labor force of 10 )
- Strong understanding of livestock grading, yield optimization, and meat cutting/fabrication standards
- Experience with payroll, scheduling, and basic P&L management
- Bilingual (English/Spanish) strongly preferred given workforce composition
- Ability to work in a cold, physically demanding plant environment
- Strong problem-solving skills and ability to work independently with ownership oversight
Preferred Qualifications
- Experience with goat/small ruminant processing specifically
- Familiarity with export documentation and international wholesale requirements
- Experience with plant ERP or production tracking software
- Food Safety certification (HACCP Certified, PCQI, or similar)
