Position Summary:
Reporting to the Executive Chef and Director of Food & Beverage, the Executive Sous Chef will primarily assist the Executive Chef in overseeing all culinary operations for Crazy Mountain Ranch. This position must help maintain the quality and integrity of the food, employee morale, dining service, kitchen, and the systems that help maintain the Members and guest expectations.
Job Duties:
- Assist Executive Chef as needed with all kitchen operations and preparation.
- Executes and supervises food production activities, e.g. proper cleaning, cutting, marinating, seasoning, cooking of food items ensure a consistent, high quality product is produced.
- Assist the Executive Chef in the planning and development of menus and recipes and ensure the correct preparation and presentation of a consistent level for all food items prepared by training and demonstration.
- Conducts, coordinates and supervises inventories to ensure kitchen is properly stocked.
- Participates in the development of food products and menus as needed for menu presentations.
- Interacts with Members and guests to obtain feedback on product quality and service levels; effectively responds to and handles guest problems and complaints.
- Supports training of kitchen staff, assists the Executive Chef with performance goals, creativity, efficiency, and productivity for all kitchen staff.
- Maintains and monitors hygiene, health and safety standards and monitors that Hazard Analysis and Critical Control Point (HACCP) regulations are adhered to
- Maintains and monitors quality, conducts quality control checks according to HACCP regulations
- Conducts quality checks of goods received
- Act as Executive Chef in the absence of the Executive Chef.

Experience/Education:
- Culinary diploma from a recognized institution or higher
- 15 years' experience as a Supervisor, Chef de Cuisine or other Culinary position in a resort or club setting
- Experience managing members of kitchen staff and consistently producing a high-level product
- Ability to direct and plan food preparation
- Experience in schedule creation to ensure kitchen has adequate staffing but is not overstaffed for F&B functions or daily restaurant preparation
