Bistro Supervisor – Job Description
Full Time! Hours: 6:30am-12pm aprox
Position Summary
Lead the day-to-day operations of the Courtyard Bistro to deliver an exceptional guest experience while maintaining full compliance with Courtyard Bistro Brand Standards. This role oversees service, product quality, cleanliness, documentation, ordering, and team training. The Supervisor is a working lead who models brand service behaviors, ensures audit readiness, and drives results through effective planning and coaching.
Reports To: Assistant General Manager or General Manager, as assigned
Direct Reports: Bistro Attendants
Schedule: Mornings /weekends/holidays based on business needs.
Core Responsibilities
1) Service & Brand Compliance
- Ensure required hours of operation are met for breakfast
- Deliver Courtyard service behaviors at the counter and tables: greeting, menu knowledge, personalization, and follow-through.
- Enforce uniform and name badge standards for all associates and self each shift.
- Maintain required Starbucks® collateral/menu displays and approved brand signage at the Bistro, lobby, and elevators.
- Execute the Morning Sensory Experience (lighting, music, aroma, visual merchandising) per brand guidance.
- Verify Ready-To-Go/retail cases are properly stocked, rotated (FIFO), priced, and attractive.
2) Product Quality & Food Safety
- Ensure food is prepared to recipe and presentation standards; calibrate portions and smallware’s.
- Conduct and document temperature checks for cold holding, hot holding, and cooking per HACCP.
- Maintain Culinary Operations Documentation, Current Use Records, allergen and SDS references on hand and current.
- Confirm availability and proper specification of required items (e.g., milk assortment, eggs, Starbucks paper goods and utensils, beverage program SKUs).
- Manage food waste tracking daily; analyze trends and adjust pars/production.
3) Cleanliness & Sanitation (Including Seating Area)
- Keep Bistro counters, equipment, floors, walls, and service stations spotless during service.
- Maintain a clutter-free lobby and seating area: wipe tables/chairs after each use, clean highchairs, sanitize touchpoints, empty/clean trash and recycling, spot-mop as needed.
- Execute and sign off the Cleaning Schedule (opening, mid-shift, closing, weekly deep-clean). Use checklists listed below.
- Ensure dishwashing/three-compartment sink and sanitizer test logs meet required ppm and change-out frequency.
4) Inventory, Ordering & Receiving
- Own pars and on-hand counts for all food, beverage, Starbucks, and disposable items.
- Have Cheney Brothers orders ready to submit every Monday and Thursday; align to forecast, waste data, and par sheets.
- Verify substitutions against brand-approved items before acceptance; escalate exceptions.
- Oversee receiving: verify quantities/quality/temperatures, code dating, and storage to standard; close POs/invoices daily.
5) People Leadership & Training
- Onboard and train new hires using the Bistro training plan: station SOPs, recipes, POS, food safety, brand behaviors, and audit expectations.
- Coach in the moment; conduct weekly skill refreshers (menu, coffee craft, speed of service, upselling).
- Lead daily pre-shift huddles with safety tip, 1–2 brand focus items, sales targets, and roles.
- Manage labor to demand: build coverage for peaks; ensure breaks; cross-train across AM/PM/Bar/Grab & Go.
6) Documentation & Audit Readiness
- Maintain the following records accurately and on-time:
- Daily Temperature Log (coolers, freezers, hot hold, cook/chill)
- Opening/Closing Cleaning Checklists
- Food Prep Lists and Waste Logs
- Current Use Records and Culinary Operations Docs
- Allergen Matrix and Chemical/Sanitizer Logs
- Delivery/Receiving Logs with temp checks
- Conduct a weekly self-audit against 2025 Bistro standards; create corrective actions and follow-up dates.
Required Knowledge, Skills & Abilities
- Strong working knowledge of Courtyard Bistro standards, Starbucks® procedures, and beverage program compliance
- Food safety/HACCP, allergen, and sanitation expertise; ServSafe or equivalent preferred
- POS proficiency; accurate cash handling and end-of-day reconciliation
- Leadership: coaching, delegation, conflict resolution, and training facilitation
- Organization and time management; ability to set priorities and meet deadlines
Education & Experience
- 1–2 years of F&B leadership or lead experience preferred; hotel Bistro/quick-service café experience a plus
- High school diploma or equivalent required; hospitality coursework/certifications preferred
Physical & Work Environment
- Stand/walk for extended periods; lift/push/pull up to 40 lbs; frequent bending and reaching
- Work in hot/cold environments (kitchen, coolers/freezers)
- Adhere to personal protective equipment and safety protocols
Performance Measurements (KPIs)
- Brand Standard Audit (BSA) compliance: Pass with minimal variances; zero critical food safety issues
- Guest satisfaction (GSS/Medallia): Bistro-related metrics at/above brand average
- Food cost and waste: within budget; downward trend in waste per cover
- On-time orders: 100% of Cheney (Mon/Thu) and Pepsi (Thu) orders ready and submitted as scheduled
- Training: 100% of associates certified on station SOPs within 14 days of start; monthly refresh completed
