What are the responsibilities and job description for the Raquette Lake Dining Services Staff position at Cortland Auxiliary Services of SUNY Cortland?
The position includes room and board from late May to Mid-October at the University's Adirondack camps. The two facilities are nestled on the shores of Raquette Lake in the heart of the Adirondack Mountains. The position is set up in split shifts to provide breakfast, lunch and dinner. In your off time, you are welcome to use camp equipment (kayaks, canoes, stand-up paddle boards), take advantage of the local area hiking, museums, shopping and the like. A boaters safety certificate is a requirement of the position. The certification can be earned online during your first two weeks of employment, if needed.
Physical Requirements
Lift 10 lb. routinely
Stand for entire shift
Stoop, bend, push, pull throughout a shift
Lift 30 lb. occasionally
Duties
Take proper food and equipment temperatures.
Responsible for courteous serving and safe preparation of food and beverages in a retail or residential
dining location.
Follows all food sanitation procedures to ensure that food and beverage are safe for customer to consume.
Prepare food for batch production following order, portion control and recipe. Uses a variety of equipment which may include ditodean, robotcoup, steamer, slicer, mixer, kettle, fryer, oven and labeling machine. Assist with counting inventory and
recording product on hand. Inspects holding items for presentation and quality and removes if found past
the prime shelf life or expiration.
Performs projects such as deep cleaning, organizing and stocking. Cleans and sanitizes work surfaces and customer dining and service areas, dish ware, utensils, floors, equipment including bread down and reassembly periodically. Uses commercial strength chemicals to clean, sanitize and polish. Remove trash. May secure facilities at the end of service.

Skills
Computing skills to take inventory, create # of pieces for a portion by performing
adding, subtracting, multiplication and division
Ability to read on a level to comprehend product labels, recipes and safety instructions
Ability to interact with customers, coworkers, and vendors in a diplomatic manner
Ability to work effectively as a team member
Ability to perform routine tasks that are directed to the workstation.
