Position Overview
We are seeking an experienced and highly organized Distillery Manager / Head Distiller to oversee the day-to-day operations of our craft distillery. This role is responsible for managing and operating production, quality control, compliance and maintenance. The ideal candidate has a deep understanding of distillation, strong operational and problem-solving skills, is eager to learn, takes pride in their work, and is committed to producing high-quality craft spirits. This role is vital to the daily operations of our distillery and involves hands-on participation in all aspects of spirit production, from raw material handling through to barreling and bottling.
Key Responsibilities
Production & Quality
- Oversee all aspects of spirit production, including raw material purchasing, mashing, fermentation, distillation, proofing, blending, bottling and barreling distilled spirits
- Maintain production schedules to meet demand and inventory targets
- Keep the distillery and equipment clean & sanitary for each production process
- Ensure product consistency and quality by following established production processes and protocols
- Collaborate with new clients for new product developments and innovation projects
Operations & Compliance
- Ensure compliance with all federal, state, and local regulations (TTB, FDA, MN A.G.E., MDA, Fire, etc.)
- Maintain accurate production records and filings (COLAs, reports, logs, etc.).
- Keeping cocktail lounge & off-sale shelf stocked with spirits, including storage of empties for reuse
- Monitor and manage raw material and packaging inventory
- Warehouseman duties, maintaining storage of raw materials needed for production, & cocktail lounge off-sale items, recording monthly inventory stock reports
- Maintain equipment and oversee preventative maintenance schedules including ice-machine for cocktail lounge
Financial & Strategic
- Manage production budgets and purchasing within cost targets
- Working with leadership on forecasting, planning, and operational improvements
Outreach & Brand Support (as needed)
- Support public-facing aspects of the business such as distillery tours, tastings, table events and collaborations
- Represent the distillery at industry events or conferences
Required Qualifications
- 2–5 years of experience in distilling
- 1-2 years of experience in mashing & fermentation
- Comprehensive understanding of distillation equipment and processes
- Familiarity with TTB regulations, record-keeping, and reporting requirements
- Strong mechanical aptitude; able to troubleshoot and maintain equipment
- Exceptional organizational and communication skills
- Proficiency with spreadsheets, production tracking software, and compliance tools
- Forklift certification
- Bachelor’s degree in science, chemistry, engineering, or related field
Work Environment
- Must be able to lift 55-lbs grain bags, work in varying temperature conditions 60-F to 95-F, and perform physical tasks
- Requires occasional weekend, early morning, or evening work, depending on production needs
Pay: $48,000.00 - $55,000.00 per year
