Copperleaf Bakery is a craft-driven bakery-café located in Harlem, building a reputation for standout viennoiserie, slow-fermented sourdough, and unique, globally inspired pastries. We are gearing up for the New Year and seeking a Lead Baker to take the reins of our bakery kitchen and staff.

What You’ll Do
- Own the viennoiserie program—croissants, cardamom buns, and other laminated favorites
- Oversee daily sourdough production, enriched doughs, and seasonal bakes
- Ensure consistency and quality control from mix to final bake
- Train and mentor junior bakers and prep assistants
- Collaborate with the Lead Cook (savory) and Dessert Production Lead to maintain smooth back-of-house operations
- Help build out systems, schedules, and standards with the founding team
- Keep the kitchen clean, compliant, efficient, and joyful
What You Bring
- 7 years of commercial baking experience, including hands-on lamination and naturally leavened bread
- 2-3 years of experience in a leadership role, such as sous-chef, kitchen/bakery manager, or lead baker.
- A strong eye for precision and a sense for flavor, with an ability to troubleshoot, tweak, and scale
- Experience in training others or leading a team, with strong communication skills
- Must have a strong aesthetic sense--design background is a plus
- Calm, focused, and clean
