What you’ll do:

The Assistant General Manager (AGM) plays a key leadership role in supporting the day-to-day operations of Cookbook Market. This position bridges hourly staff and senior leadership, ensuring smooth service execution, team development, inventory accuracy, and operational excellence. The AGM leads from the floor, maintaining presence, intention, and accountability throughout each shift, and is responsible for upholding our core values while driving guest satisfaction and team performance.

The Assistant General Manager position will be responsible for the following:

Service Execution

  • Master and uphold all Steps of Service with consistency across FOH roles.
  • Ensure service checklists and SOPs are followed daily (birthdays, host communications, takeout protocols, chit procedures, etc.).
  • Lead by example in all FOH positions as needed.
  • Maintain table standards: settings, maintenance, resets, pacing, and overall flow.
  • Ensure urgency and precision in resets between reservations.
  • Support and guide hourly employees to ensure a productive, positive service environment.

Guest Relations & Floor Leadership

  • Maintain a strong presence on the floor, directing flow and interacting with guests.
  • Greet guests enthusiastically and ensure service issues are addressed promptly and professionally.
  • Support table turn flow, pacing, and maximization of covers.
  • Ensure phones are answered within 3 rings and guests are greeted within 5 seconds.
  • Food and Beverage Knowledge
  • Maintain full knowledge of menu items, modifications, and allergens.
  • Demonstrate mastery of non-alcoholic beverages, espresso drinks, and beverage station standards.
  • Maintain proficiency in wine offerings, including by-the-bottle selling.
  • Assist in training staff in product knowledge and sales techniques.

Team Training & Coaching

  • Train, coach, and support FOH staff with real-time, constructive feedback.
  • Participate in new hire orientation and set clear performance expectations.
  • Lead pre-shift meetings, demos, and protocol rollouts.
  • Identify opportunities for team development and skill-building.

Operational Support & Cleanliness

  • Maintain FOH cleanliness and readiness throughout the day.
  • Ensure hourly bathroom checks are completed.
  • Oversee linen, chemicals, FOH inventory, and stock levels.
  • Support maintenance of dumpsters, utility areas, and storage spaces.
  • Maintain and track inventory of china, glassware, silver, and beverage tools.

Administrative & Financial Responsibilities

  • Develop proficiency with financial tools (PCL, petty cash, inventory systems, invoice entry).
  • Assist with receiving deliveries and validating invoices.
  • Support labor management functions: scheduling, OT, and break compliance.
  • Communicate daily service challenges or staffing concerns to senior leadership.
  • Assist with reservations, on-site catering events, and large-format to-go coordination.

  • Maintain accountability and uphold systems, standards, and daily checklists.
  • Provide exceptional, memorable hospitality to every guest.
  • Collaborate with supervisors, the Kitchen team, and department buyers.
  • Assist with interviewing, onboarding, and performance reviews.
  • Lead organization of storefront, BOH spaces, storage, and inventory systems.
  • Help develop departmental systems to streamline and improve operations.
  • Perform other duties as assigned by senior management.

Qualifications:

  • Previous FOH management or supervisory experience in a restaurant, café, or market environment.
  • Ability to perform all essential duties satisfactorily.
  • Current California Manager Food Handlers certification and Anti-Harassment certification(or ability to obtain).
