Job Responsibilities:

· Prepare and maintain house-made pizza dough, including mixing, scaling, balling, proofing, fermenting, and storing                                                                                                                       according to established recipes and procedures.

· Operate and manage a wood-burning pizza oven, including fire maintenance, temperature control, and proper        cooking techniques.

· Stretch, top, and bake pizzas to company standards for quality, consistency, and presentation.

· Monitor dough quality and fermentation schedules to ensure optimal product performance.

· Maintain a clean, organized, and efficient pizza station throughout service.

· Coordinate with kitchen and front-of-house staff to ensure timely and accurate order execution.

· Assist with prep work, inventory management, and receiving deliveries as needed.

· Follow all food safety, sanitation, and health department regulations.

· Contribute ideas and enthusiasm toward menu development and pizza innovation.

Qualifications:

· Minimum of two (2) years of experience as a pizza cook or similar culinary position.

· Demonstrated experience producing pizza dough from scratch.

· Proven experience operating a wood-fired or wood-burning pizza oven.

· Strong understanding of dough fermentation, hydration, and pizza-making techniques.

· Knowledge of food safety, sanitation, and proper food handling procedures.

· Ability to work efficiently in a high-volume, fast-paced kitchen.

· Excellent organizational and time-management skills.

· Serv Safe Food Handler certification preferred or required within 30 days of hire.

Physical Requirements:

· Ability to stand and walk for 8–10 hours per shift.

· Ability to lift and carry up to 50 pounds.

· Frequent reaching, bending, twisting, stooping, pushing, and pulling.

· Ability to work safely around high temperatures and live-fire cooking equipment.

· Manual dexterity and hand-eye coordination required for dough handling and pizza preparation.
