What are the responsibilities and job description for the Banquet Chef position at Coeur d'Alene Casino Resort Hotel?
SUMMARY:
The Banquet Chef will coordinate all required aspects of catered events and banquets to ensure the best quality catering experience to the customers.
RESPONSIBILITIES:
- Plan, coordinate, supervise, and participate in all aspects of all events catered through the banquets department.
- Assist Banquet FOH team with buffet set up
- Lead in the preparation and production of food as needed.
- Participate in both Food & Beverage and Banquet team meeting
- Maintain accurate recipe data base and recipe costs
- Conduct monthly inventory and inventory transfers
- Rotate food and prepped product in banquet area.
- Train and educate new employees.
- Ensure proper ordering and neatness in banquet area.
- Maintain high food quality and consistency of banquet production items and menu.
- Ensure sanitation and cleanliness guidelines are strictly adhered to.
- Work closely with the Executive Chef to create and implement new menus and special occasion menus.
- Assist Executive Chef in maintaining food and labor costs.
- Work closely with all chefs to improve employee morale and conduct employee discipline fairly and consistently.
- Other projects and duties as assigned.
QUALIFICATIONS
Education/Experience:
- Associate degree in Culinary Arts preferred.
- Minimum of two years previous experience supervising four or more employees.
- Minimum of five years previous banquet production experience required.
- Must be 18 years of age or older.
- ServSafe certification required
Skills/Knowledge:
- High proficiency with Microsoft Word and Excel required.
- Excellent customer service skills are required.

Salary : $50,000 - $60,000
