Cod & Capers Seafood is a long‑established, family‑owned seafood market, café, and federally inspected seafood processing facility. We are seeking a Skilled Fish Cutter / Fish Butcher to join our processing team and help us maintain the high standards our customers expect.
This is a full or part‑time position in a fast‑paced, professional environment where precision, consistency, and respect for the product are essential.
Position Overview
The Fish Cutter / Butcher is responsible for breaking down whole fish into fillets, portions, steaks, and specialty cuts with accuracy and efficiency. This role requires strong knife skills, knowledge of seafood species, and the ability to maintain yields and quality while working safely and cleanly in a federally inspected facility.
You will work with a wide variety of fresh, high‑quality seafood every day — a great opportunity for someone who takes pride in their craft.
Key Responsibilities
Fish Cutting & Butchery
- Break down whole fish into fillets, portions, and specialty cuts with precision and consistency
- Maintain excellent yields and minimize waste
- Identify species, quality, and freshness indicators
- Trim, skin, pin‑bone, and prepare product to company specifications
- Follow standardized cutting procedures to ensure uniformity
Production & Workflow
- Assist with daily production needs for the market, café, and wholesale orders
- Work efficiently to meet deadlines during busy periods
- Support holiday and seasonal high‑volume production
- Communicate shortages, quality issues, or unusual product conditions to management
Food Safety & Compliance
- Follow all federal inspection standards, HACCP procedures, and internal safety protocols
- Maintain a clean, organized, and sanitary work area
- Properly store, label, and rotate product (FIFO)
- Handle knives and equipment safely and responsibly
Teamwork & Professionalism
- Work collaboratively with the processing team and management
- Maintain a positive, respectful attitude in a family‑owned environment
- Be reliable, punctual, and consistent in performance
Qualifications
- Experience cutting fish professionally is required
- Strong knife skills and understanding of seafood yields
- Ability to identify species and assess quality
- Comfortable working in a cold, fast‑paced production environment
- Ability to lift 50 lbs and stand for extended periods
- Knowledge of food safety and sanitation practices
- Dependable, detail‑oriented, and able to follow instructions
