What are the responsibilities and job description for the Smokehouse Operator - TYR - SMOKEHOUSE -2nd shift position at Clemens Food Group LLC?
SUMMARY This position is responsible for monitoring the cooking and chilling of Hatfield's products going through the smokehouse department.
ESSENTIAL DUTIES AND RESPONSIBILITIES include the following:
1.) Monitor the smokehouses to ensure that all products are cooked to proper company specifications.
2.) Monitor all chilling of products that come through the department to ensure that they are chilled in compliance with company specifications.
3.) Load and unload the smokehouses and brine chillers.
4.) Accurately record and document all weight sheets and charts.
5.) Assist in inspecting / checking the smokehouse rooms for Standard Sanitary Operating Procedures (SSOP) deficiencies hourly.
Other duties may be assigned.
