Chula Vista Resort is looking for an experienced professional to join our staff as a Culinary Lead.  Our ideal candidate has experience in a supervisor role in a kitchen setting who enjoys working in a fast-paced environment and takes pride in delivering high-quality service and food to guests.    Rate of pay is based on experience $14- $22 per hour.  

Essential Duties and Responsibilities

  • Monitor sanitation practices to ensure that employees follow standards and regulations
  • Check the quality of raw and cooked food products to ensure that standards are met
  • Determine production schedules and staff requirements necessary to ensure timely delivery of services
  • Check the quantity and quality of received products
  • Supervise and coordinate activities of cooks or workers engaged in food preparation
  • Instruct cooks or other workers in the preparation, cooking, garnishing, or presentation of food
  • Prepare and cook foods of all types, either on a regular basis or for special guests or functions
  • Inspect supplies, equipment, or work areas to ensure conformance to established standards
  • Plan, direct, or supervise food preparation or cooking activities 
  • Demonstrate new cooking techniques or equipment to staff
  • Produce and serve all foods for Kilbourn City Grill, including: hot entrees, salad bar, sauces and soups.
  • Work several different stations, including: prep, salad bar, carver, sauté and buffet runner.
  • Create the highest guest satisfaction possible by having a clean, organized, well stocked work area. Perform and complete other assigned duties.
  • Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
  • Determine, communicate, and monitor personal and department achievements and performance standards on a daily basis.
Qualifications:

Experience:

Required- 1 year experience working as a chef in a fine dining restaurant

Preferred- 2 year experience as a chef in a fine dining restaurant in a supervisor role

 

  • Skills, Knowledge, Abilities
    • The ability to work with other people effectively and with other staff positions is important.
    • Must be trainable and take instruction to learn position.
  • Physical Requirements
    • Must be able to lift at least 20lbs.
  • Body Positions
    • Sitting, standing for an extended period of time.
  • Body Sense
    • Have full use of eyes and ears, full power of speech.
  • Body Movements
    • Walking, turning head and torso, bending arms, wrists, and fingers.
  • Mental Requirements
    • Mathematics - Must be able to do routine math calculations.
    • Language - Must be able to communicate in English, both verbally and in writing, well enough to give instructions, relay information, and carry on effective interchange with customers, vendors, and company staff.
