Job Description

Are you interested in an Anchorage-local remote camp position? This position is located across the inlet at Beluga. It's a hop, skip and jump from Merrill Field and has a beautiful facility that operates year round. BULL COOK (KITCHEN)

QUALIFICATIONS:

  • Current State of Alaska Food Worker Card.
  • Documented SERV Safe Training.
  • Minimum 5 years’ experience as bull cook, with at least 3 of these as camp kitchen bull cook.
  • Ability to read write and communicate well.
  • Willing to fly in small aircraft.
  • Willing to live in camp facilities for 7 days or more, working 12 or more hours per day.
  • Be flexible to stay in camp when weather, sickness or other unforeseen problems prevent the relief bull cook from arriving on schedule.
  • Able to work well with other employees.
  • Must be able to lift at least 50 pounds
  • Must be free of health or physical problems that would interfere with duties or put at risk you or other personnel working at the Beluga camp.

EMPLOYEE RESPONSIBILITIES:

  • Provide appropriate work clothes and safety shoes kept in a clean, neat manner.
  • Provide proper hair restraints and keep well groomed, clean-shaven (neatly trimmed mustache and beard accepted) in a manner that meets State of Alaska Health Codes and Chugach Policies.
  • Read and comply with all Chugach Electric Culinary Standard Operating Procedures.

GENERAL REQUIREMENTS

The kitchen bull cook is responsible for, but not limited to; kitchen, dining room and food storage areas, break rooms food and snack items, salad bar, dessert counter, washing and sanitizing dishes, pot and pans, stocking and stock rotation, general cleaning and assisting the cook as required.

  • Perform tasks in compliance with all regulations set by the State of Alaska Department of Environmental Conservation and Chugach policy and safety regulations.
  • Maintain his/her work area in a clean and neat manner in accordance with State Health Department regulations and Chugach policies.
  • Preparation of daily salads and fruit dishes meeting company guideline for cost and heart healthy programs.
  • Rotate produce and dairy products to ensure 1st in 1st out usage in accordance with health codes.
  • Perform such other duties as may be necessary to ensure the smooth day-to-day operation of the facility.
  • Be familiar with the barracks bull cook job description to assist when necessary.

EXAMPLES OF DUTIES:

  • Keep kitchen, dining room and common areas clean, condiments and paper products stocked.
  • Plan for varying populations to be served.
  • Store and handle food in accordance to health department regulations until ready for use.
  • Do vegetable and fruit washing, slicing, chopping, dicing, shredding, cook eggs and pasta, make gelatin and puddings, whip cream, thaw berries, and other food products in accordance with health department regulations.
  • Test food with proper thermometer to determine proper temperature is maintained.
  • Operate, clean and sanitize mixers, shredders, blenders, food processors, meat slicer, grinders and other food service equipment.
  • Work with chemicals such as dishwashing soap, disinfectants, urn cleaners, floor cleaners, window cleaner, stainless cleaner and a variety of other chemicals used in the industry.
  • Prepare special diet items when necessary.
  • Follow standard recipes, but may make independent decisions relative to methods of preparation.
  • Mark and date all open food or food not in their original containers and store properly.
  • Make meat, cheese and vegetable plates for break rooms.
  • Keep break rooms clean and stocked with snack and paper products as necessary.
  • Meet morning flight to pick up newspapers for distribution to proper areas.
  • Meet flights as necessary to pick up water, soda or food items.
  • Meet grocery flight with the assistance of barracks bull cook pick up groceries and transport to camp.
  • Assist with grocery order check in and with the assistance of the barracks bull cook stock and rotate incoming in proper location to ensure 1st in 1st out usage.
  • Assist cooks as necessary.
  • Assist with training of temporary hired culinary personnel.

BULL COOK (BARRACKS/HOUSEKEEPING)

QUALIFICATIONS:

  • Current State of Alaska Food Worker Card.
  • Documented SERV Safe Training.
  • Minimum 5 years experience as bull cook, with at least 2 of these as camp barracks bull cook.
  • Ability to read write and communicate well.
  • Willing to fly in small aircraft.
  • Willing to live in camp facilities for 7 days or more, working 12 or more hours per day.
  • Be flexible to stay in camp when weather, sickness or other unforeseen problems prevent the relief bull cook from arriving on schedule.
  • Able to work well with other employees.
  • Must be able to lift at least 50 pounds

The barracks bull cook (housekeeper) is responsible for, but not limited to: housekeeping the barracks rooms, bathrooms, common areas, offices, exercise room, entry and exit areas, busing tables, washing and sanitizing dishes, assisting the cook and kitchen bull cook when necessary.

  • Perform tasks in compliance with all regulations set by the State of Alaska Department of Environmental Conservation and Chugach policy and safety regulations.
  • Maintain the work area in a clean and neat manner in accordance with State Health Department regulations and Chugach policies. Do not prop open any doors in your working areas.
  • Clean and keep clear all exit areas of snow, ice or any other obstruction inside and out that would hinder fire escape. Sweep and mop entrance areas at least daily, vacuum floor mats and mud catchers as needed. Clean ashtrays as needed.
  • Keep common areas vacuumed, dusted, TV screens clean and free of trash and dishes.
  • Keep public laundry rooms, clothes washers and dryers and report any not in good working condition. Check and clean dryer lint screens daily.
  • Replace towel and wash clothes in the exercise room, clean bathroom, shower and sweep and mop as necessary. Clean weightroom at least three times per week.
  • Administration building offices, halls and washrooms cleaned, stocked and trash emptied. Sweep, mop and dust all offices as necessary.
  • Clean office bathrooms and stock soap and paper products as necessary. Bus tables, wash dishes and assist kitchen bull cook during meal hours.
  • Clean bathroom in Warehouse at least 3 times weekly (Hard Hat Area). Public and contractor bathrooms cleaned, stocked and trash emptied daily.
  • Linen pulled from outgoing beds. Incoming beds made-up, rooms and bathrooms/showers cleaned and ready for occupancy. Make sure no beds, blankets, etc. are pushed against heaters.
  • Dust furniture, clean sinks, showers, toilets, floors, and mirrors daily. Change towels and washcloths daily. Check fresh towels to ensure they are in good condition.
  • Inspect sinks, toilets and showers for leaks or other problems and report to the supervisor for maintenance. Check and stock soaps and paper products as necessary. Empty wastebaskets daily or as necessary.
  • Ensure temporary and contractor rooms cleaned, made-up after use including chests and medicine cabinets.
  • Day sleeper areas are tended to after 5:00 PM daily except Thursdays. Check linen, blankets, towels, etc. to make sure they are in usable condition.
  • Operate vacuums, carpet shampoo machine, dishwasher and other equipment as necessary.
  • Check vacuums/bags/filters to make sure they are working properly. Rooms must be vacuumed thoroughly at least weekly.
  • Work with chemicals such as bathroom cleaners, bowl cleaners, window cleaners, floor cleaners, laundry detergents and other chemicals used in the industry.
  • Towels, washcloths and linens are washed, dried and folded, making sure linen is in good condition. Soiled linen counted and sent in on flight every Wednesday for washing.
  • Be familiar with the kitchen bull cook job description to assist when necessary. Assist kitchen bull cooks in the dining area at mealtimes.
  • Meet grocery flight with the assistance of kitchen bull cook for freight and groceries. Refuel truck regularly, ensure truck is fueled before next shift arrives.
  • Assist with grocery order check in and with the assistance of the kitchen bull cook stock and rotate incoming in proper location to ensure 1st in 1st out usage.
  • Assist with training of temporary hired culinary personnel.
  • Some Items to be completed prior to shift change.
  • Perform such other duties as may be necessary to ensure the smooth day-to-day operation of the facility.
