What are the responsibilities and job description for the Grill Cook position at chitori?
The Role
We’re hiring Line Cooks and a dedicated Grill Cook (Yakitori-shi). The grill is the heart of this kitchen — we want people who respect it and want to master it.
Grill / Yakitori Station
• Work the charcoal (binchotan) grill: skewer, season, and cook yakitori to spec
• Control heat zones, fire management, and timing across multiple skewer types
• Hit consistency on every order — same char, same doneness, every time
• Manage grill volume during a rush without dropping quality
Prep & Station Setup
• Daily prep: butchering/portioning proteins, skewering, marinating, sauces, garnishes
• Set up and stock your station fully before service (mise en place)
• Portion control and proper labeling/dating of all prepped items
• Restock and reset during and between services
Line & Service
• Run assigned line stations (grill, fry, cold, nabe) during service
• Keep pace with ticket flow; communicate with the expediter and team
• Plate to spec — clean, fast, consistent
Cleaning & Close
• Maintain a clean, sanitary station all shift (NYC Health Code)
• Break down, deep-clean, and properly store everything at end of shift
• Run closing checklists; grill and equipment cleaning
Requirements
• Grilling experience required — you know fire, char, and timing
• Yakitori / binchotan experience = higher pay. If you’ve worked charcoal skewers, we want you and we’ll pay for it
• Speed, consistency, and focus during a rush
• Basic-to-conversational English required
• Legal authorization to work in the U.S. required
