What are the responsibilities and job description for the Pastry Assistant position at Chesapeake Bay Beach Club?
Pastry Assistant provides operational support to the Pastry Chef in the execution of daily pastry production, preparation, and finishing of desserts and baked goods while maintaining quality standards and operational efficiency in accordance with club guidelines.
Scope of Responsibilities:
- Execute mise en place, scale recipes, prepare components, and finish plated desserts according to established recipes and presentation standards
- Maintain workstation organization, cleanliness, and food safety compliance including proper rotation, labeling, dating, and adherence to FIFO principles
- Assist with inventory management, daily prep lists, par level maintenance, and communicate supply shortages or equipment malfunctions to Pastry Chef
- Support special event production including weddings, banquets, and club functions by preparing advance components and executing plating during service
- Ensure compliance with all health department regulations, food safety protocols, and club sanitation standards
- Perform routine maintenance and cleaning of pastry equipment including mixers, ovens, blast chillers, and other specialized tools
- Support recipe testing, costing activities, and documentation as directed by Pastry Chef
