POSITION: Long Term Care Food Services Supervisor
SUPERVISOR: Director of Dining Services
HOURS: 8am-4pm
Responsible for the overall supervision of RSA’s assigned to the SNF houses including hiring, orientating, evaluating, scheduling, and disciplinary action as necessary. Also completes the schedule and payroll approvals in Paycom.
Assures RSA’s complete meal prep as directed with proper techniques and proper temperature of food and accurate serving of modified diets. Assures all RSA’s complete their assigned tasks prior to the end of their shift.
Works in conjunction with the Dietary Technician/Dietitian to obtain resident’s individual dietary preferences and educates residents and families regarding healthy eating habits when indicated.
Assists with maintaining all records necessary within the Food Service Department, e.g. inventory, daily census, diet changes, diet orders, list of residents, food intake studies, likes/dislikes of residents.
Assists in the review of the cyclical menus.
Assists in conducting departmental and inservice programs and on-the-job training in conjunction with the Director of Education and Training and the Registered Dietician as well as assuring the completion of staff competencies for all food service duties.
Completes house stock supply order list weekly in accordance with PAR levels. Assures each longterm care house has adequate inventory to prepare meals.
Responsible for conducting orientation for new employees and annual demonstrations/competencies for all house dietary staff to include dysphagia/thickening liquids, choking, and diet consistency as well as any other inservices as required.
Assists in preparing and serving meals to residents as needed.
Assures proper storage of all food with proper labeling and dating in all kitchen areas.
Responsible for proper sanitation of all kitchens and dining rooms in the long-term care houses as well as kitchen equipment and storage rooms assuring a high level of cleanliness.
Assists in assigning daily duties.
Assists in writing appropriate job descriptions and policies and procedures for the dietary department.
Responsible to direct team to inspect all refrigerators in the longterm care houses including obtaining temperature readings and assuring that food is correctly dated.
Assures all equipment, thermometer calibration and food temperatures are documented based on facility policy.
Responsible for the dating and labeling of supplements as well as the delivery to each individual house.
Attends department head meetings, meal rounds, resident council, resident menu meetings, and any other meetings as assigned.
Performs duties according to the highest ethical and moral standards and in adherence with the facility’s corporate compliance plan and all applicable governing laws. Adheres to the facility’s confidentiality statement in accessing and safeguarding protected health information (PHI) of residents and employees, as necessary to perform job duties.
Performs any other duties assigned by the Director of Dining Services.
Qualifications:Graduate of an accredited college or school with an Associate and Applied Science degree in the food and nutrition, food management, or institutional management or food/kitchen sanitation and one year’s experience in a supervisory position within a food service department preferred.
OR
High school graduate and three years experience in a food service department supervisory role.
Ability to understand Department of Health regulations and maintain compliance.
