What are the responsibilities and job description for the Dietary Cook position at CENTRAL CONTINUING CARE?

Summary: Responsible for the preparation of food in accordance with current applicable federal, state, and local standards, guidelines and regulations with established policies and procedures, and may be directed by the Dietary Manager to ensure that quality food service is provided at all times.
Essential Functions:
- Demonstrates a positive and professional image that emulates the organization’s mission statement and encourages a spirit of cooperation and teamwork with co-workers.
- Assumes the responsibility of the department operations when the NSD is absent.
- Prepares meals in accordance with the planned menus, standardized recipes, therapeutic diets and authorized substitutions.
- Prepares and serves meals that are palatable and appetizing in appearance. Documents food temperatures prior to meal service.
- Prepares food in accordance with proper food handling techniques.
- Ensures that meals are accurately assembled, including proper temperature, therapeutic diets, special items, regular and adaptive utensils, and delivered within established timeframes.
- Ensures that food is stored in accordance with safe food handling standards. Completes documentation of proper holding temperatures for all refrigerated and frozen food storage areas.
- Ensures that food storage areas are clean and properly arranged at all times.
- Directs and participates in daily or scheduled cleaning duties in accordance with established practice.
- Ensures that all sanitizing solutions are maintained at proper dilution.
- Disposes of food waste in accordance with established practice.
- Complies with all Infection Control, Standard Precautions, and OSHA standards for healthcare professionals.
- Performs administrative duties as required, including processing diet order changes, generating labels or reports, identifying equipment or supply needs or issues.
- Participates in all department meetings and completes all required educational course work as indicated.
- Performs all or duties as assigned.
- Assures residents safety.
Qualifications: One year of experience in a hospital, skilled nursing facility or other healthcare setting preferred. Serve Safe Certificate required.
