What are the responsibilities and job description for the Dishwasher position at Cedar Tree Restaurant?
Dish Washer
The dish washer position is a key support position here at the Cedar Tree. It is a fast-paced, physically intensive position that requires the abilities to think ahead, follow instructions accurately and efficiently, and work on a team. Employees performing the dishwasher position will be called upon to:
- Wash dishes, glassware, silverware
- All dishes should be pre-rinsed front and back, using the spray head until all visible food residue is removed. The dishes should then be run through the dish machine to both clean and sanitize. The dishes should then be allowed to dry before being stacked and placed in their proper place. A visual inspection of the dishes front and back should be made prior to restocking in order to ensure no dishes are still soiled.
- Wash pots and pans
- Pots and pans should be washed by hand in the the three bin sink. The first bin should be filled with hot, soapy water. The second bin should have hot, clean water. Using a steel scrubber, pots and pans should be scrubbed in the soapy water bin until no more visible food residue remains, ensuring to wash all parts of the item, inside and out. Then the item should be dunked in the fresh clean water to remove any soap suds. The item should then be allowed to dry briefly before restocking in the items proper place. It may be neccesary to replenish the soapy water and rinse water multiple times in order to effectively clean the pots and pans.
- Change grease in deep fryers
- The dishwasher will regularly be called upon to assist with changing the deep fryer oil. This can be somewhat dangerous, so the utmost care should always be taken. This includes emptying hot grease into the filter machine, cleaning the deep fryer, transporting the hot grease in the filter machine to the oil storage tank, pumping the grease into the tank, and cleaning the oil filter machine.
- Clean Bathrooms
- The dishwashers are responsible for cleaning both the male and female bathrooms. This includes scrubbing the toilets, urinals, and sinks, sweeping and mopping the floors, wiping down the walls, restocking the hand soap, paper towels, and toilet paper, and emptying the trash.
- Keep dish area clean
- This dish area should be kept clean at all times. This includes the top work surfaces, underneath the work surfaces, the spray arm, and the outside of the dish machine, table legs, and the walls and floors surrounding the dish area. The dish machine itself should be checked frequently during the day to make sure that food residue is not building up in front of the drain screen.
- Change sign
- Occasionally, the dishwasher may be required to change the sign message.
- Change soda
- Occasionally, the dishwasher may need to change out the box of soda syrup.
- Restock product to serving line
- Regularly, the dishwasher will need to carry food product from the refrigerators or freezers to the prep areas or line.
- Take out trash
- The dishwasher is to take out the trash at the end of every shift as needed. This includes all kitchen trash cans and both wait station trash cans. If a trash can is too heavy to lift alone, please ask another kitchen employee for assistance.
- Assist other kitchen staff with cleaning duties
- The kitchen and buffet line must be swept and mopped nightly and both wait stations are to be mopped nightly. The dishwasher must remove the non slip mats from both stations every night and hose them down behind the building. Other cleaning duties the dishwasher is responsible for may include disposing of empty product packaging, putting soiled aprons and rags in their storage containers, and helping with the scheduled kitchen cleaning rotation.
- Assist with food prep
- The dishwasher will sometimes be called on to assist with food prep during slow periods.This may include things like peeling shrimp, cleaning and seasoning crabs, tenderizing pork or beef cutlets, etc.
- Make sauces
- The dishwasher makes the ranch, cocktail, can tartar sauces. These should be checked at the beginning of every shift and made if needed. Follow the posted recipe.
- Check in and stock groceries
- The dishwasher is in charge of checking in groceries as they are unloaded from the truck and then place them in their proper position in the freezers, refrigerators, or dry storage areas. They must also dispose of any packaging left from unpacking the items.
This is not intended as a complete list as the dishwasher may be called upon to perform other actions as the need arises. This could include cleaning messes in the dining room, assisting with heavy lifting, cooking, etc.
Pay: $12.00 - $14.00 per hour
