Position Overview
The Executive Sous Chef plays a critical leadership role in delivering the elevated, ranch-style fine-dining experiences that define Cedar Cove Ranch. This position supports and works directly with the Executive Chef in menu execution, culinary operations, and team leadership across guest stays, corporate retreats, and exclusive outdoor experiences.
You will help craft memorable meals—from wild-game inspired cuisine to elevated comfort classics—ensuring every plate reflects CCR's commitment to world-class hospitality, impeccable presentation, and smooth operational flow.
This is a hands-on, high-impact role ideal for a chef who thrives in a dynamic environment serving executives, luxury travelers, outdoor sportsmen, and corporate groups.
Key ResponsibilitiesCulinary Leadership & Execution
- Support Executive Chef in all culinary operations, menu planning, prep, and execution.
- Lead kitchen team during service and ensure consistent, high-quality food presentation.
- Prepare elevated ranch-style cuisine, including wild game dishes (whitetail, axis, blackbuck, etc.), premium cuts, seafood, and corporate-event menus.
- Maintain impeccable standards of cleanliness, organization, and professionalism.
- Oversee daily prep lists, station assignments, and food quality checks.
Guest Experience Excellence
- Deliver personalized meal experiences for VIP guests, corporate executives, hunting parties, and large retreat groups.
- Communicate with Hospitality and Guest Services teams to time meals with daily schedules, hunts, and activities.
- Adapt menus for dietary needs while maintaining fine-dining standards.
- Enhance the CCR brand through thoughtful presentation, creativity, and consistency.
Kitchen Operations & Efficiency
- Manage inventory, assist with purchasing, and maintain proper stock levels for all food and beverage operations.
- Ensure waste reduction, cost control, and portion accuracy.
- Assist with F&B organization, refrigeration logs, receiving, and storage protocols.
- Support the Executive Chef in developing systems, SOPs, and process improvements.
Team Leadership
- Train, motivate, and mentor prep cooks, utility cooks, and kitchen staff.
- Lead by example in professionalism, accountability, safety, stewardship, and CCR's PASSION core values.
- Step in as kitchen lead when the Executive Chef is off property.
Ideal Candidate
- Strong background in upscale or fine-dining kitchens; resort or retreat experience preferred.
- Experience with wild-game cooking or strong willingness to learn.
- Skilled in batch cooking, plated meals, buffets, and corporate-event service.
- High sense of ownership, attention to detail, and ability to thrive in a fast-paced, diverse environment.
- Strong communication skills and natural leadership presence.
- Passion for outdoors, hospitality, and creating memorable experiences for guests.
