- Make a precise cut on the shoulder and scapula.
- Pull the wing down to separate breast meat from the shell.
- Leave no bones on the breast meat.
- Leave as little meat on the carcass as possible to maintain a good yield percentage
- Performs other duties as assigned.
- Use required PPE and follow all safety guidelines of the company.
- Any other duties as assigned by the supervisor.
- Oversees work at various stations along the production lines processing poultry food products.
- Adheres to all safety requirements including PPE, preventing, and reporting unsafe acts and conditions, Lockout-Tagout procedures, and Process Safety Management related matters.
- Ensures that the qualities of the products are being met according to the product specification of QA and USDA.
- Ensures that all equipment throughout the departments is running smoothly.
- Maintains a clean and safe working environment.
- Minimum 18 years of age.
- Excellent attendance record.
- Be willing to cross train.
- Use of both hands and able to grasp.
- Must satisfactorily perform all qualifying jobs on a “full speed” front half for both left and right sides shoulder cutting
- Previous Line Lead experience is preferred but not required.
- Experience in poultry processing is required.
- High School Diploma or equivalent experience is preferred.
- Familiar with GMP's and poultry processing procedures.
- Must be able to speak and write English.
- Must be able to work overtime, weekends, and occasional holidays.

- Jobs are fast-paced and require repetitive motion.
- Exposure primarily consists of wet and moist floors which include metal and plastic grating surfaces.
- May be exposed to temperatures of 45 degrees to 50 degrees Fahrenheit with both ambient and 100% humidity.
- Must wear and use protective and safety equipment required for the job as directed by the Company.
- Must handle the weight of 8 to 10 lbs. repetitively, occasionally lifting, pushing or pulling.
- Ability to work in a stationary position, on feet for the entire shift.
- Ability to work with tools, like scissors, knives and/or power tools for the duration of the shift.
- Ability to climb steps and to access and egress through production environment.
