Car-nnoisseur is a 100% scratch-made, no-shortcuts restaurant, café, and bakery rooted in craftsmanship, character, and uncompromising quality. We are searching for a Master Head Baker — a seasoned artisan with deep technical mastery, refined taste, and leadership ability — to lead our baking program and establish Car-nnoisseur as a benchmark for exceptional pastry and bread production in Orange County.
As our Head Baker, you will oversee all aspects of bakery production: from laminated pastries and artisan breads to viennoiserie, doughs, prep schedules, quality control, and team development. This role is for someone who understands precision, consistency, and high-volume craft baking at the highest level. You will shape the daily offerings for a 140-seat restaurant with an ambitious pastry and bread program, all produced fresh in-house every day.
This is a hands-on leadership role requiring early-morning production, recipe development, a deep understanding of fermentation and lamination, and the ability to train and build an elite, disciplined bakery team. Your work will directly define the standard of excellence that Car-nnoisseur delivers to every guest.
Key Responsibilities
- Lead all daily baking operations, including artisan breads, laminated pastries, viennoiserie, specialty doughs, and seasonal items
- Build and manage a high-performance bakery team; train, coach, and maintain discipline
- Oversee production schedules to support breakfast, lunch, dinner, and pastry programs
- Develop and refine recipes that align with Car-nnoisseur’s 100% scratch-made philosophy
- Control quality, consistency, texture, and visual standards across all bakery items
- Manage early-morning bake-offs, shaping, lamination, proofing, and oven work
- Create efficient production systems for 400 daily pastries and breads
- Maintain clean, organized workspaces with full adherence to food safety standards
- Partner with culinary leadership to contribute to menu development and seasonal changes
- Oversee inventory, ordering, par levels, and waste management
- Ensure all products are free of seed oils, refined sugars, and unnecessary additives
- Uphold Car-nnoisseur’s brand values of excellence, authenticity, and integrity
Qualifications
- Minimum 7–10 years of artisan baking experience
- At least 3 years in a leadership or head baker role
- Mastery of laminated doughs, artisan bread, fermentation, shaping, and proofing
- Experience in high-volume production with elite consistency
- Proven ability to lead, train, and mentor a baking team
- Strong understanding of bakery scheduling, dough timelines, and workflow
- Visual portfolio of breads, laminated pastries, and baked goods required
- Experience with European-style techniques strongly preferred
- Ability to work early mornings (2–4 AM start times)
- Strong organization, communication, and leadership skills
- High personal standards and alignment with a no-shortcuts, honest craftsmanship philosophy
