Job Summary

Join our founding kitchen team at Capriciano Osteria as a Prep Cook and be a foundational part of one of Santa Rosa's most exciting new restaurant openings! Opening May 2025, Capriciano is a seafood-forward Italian osteria where quality begins hours before the first guest arrives. In this role, you will be an essential part of our kitchen — executing the daily prep that makes exceptional service possible. We want someone precise, organized, and genuinely passionate about food who wants to grow in a serious kitchen environment.

Duties

• Complete daily prep lists as directed by Sous Chef and Executive Chef
• Precisely execute knife work, butchery, portioning, and mise en place to kitchen specifications
• Prepare fresh pasta doughs and components including gnocchi, ravioli filling, and lasagna sheets
• Prepare sauces, stocks, dressings, and marinades from scratch — including ragu bolognese, pomodoro, lemon cream, and our signature creamy cheese sauce
• Portion and prepare seafood components: shrimp, clams, octopus, salmon, sea bass, petrale sole, and calamari
• Receive and properly store all incoming deliveries — label, date, and rotate inventory
• Maintain cleanliness and organization of prep areas, walk-in coolers, and dry storage
• Support the line during service when needed
• Follow all food safety, sanitation, and health code standards at all times

Experience

• Prior kitchen experience (prep cook, kitchen assistant, or line cook) preferred
• Strong knife skills and attention to detail in portioning and consistency
• Fresh pasta experience a strong plus (gnocchi, ravioli, lasagna)
• Ability to follow written and verbal recipes and instructions precisely
• Physical stamina — ability to stand for extended periods and lift up to 50 lbs
• Food Handler Certification (or ability to obtain within 30 days)
• Reliable, punctual, and eager to learn in a professional kitchen

Pay: From $21.00 per hour
