Job Summary:
The Pizzaiolo is responsible for preparing, stretching, topping, and baking pizzas to perfection, ensuring consistency in flavor, texture, and presentation. This role requires strong dough-handling skills, attention to detail, and the ability to work efficiently in a fast-paced environment.
Responsibilities:
Prepare pizza dough, sauces, and toppings according to recipes and quality standards.
Stretch and shape dough to order, maintaining consistency in size and thickness.
Bake pizzas in specialty ovens, ensuring proper cooking times and crust texture.
Monitor oven temperature and adjust cooking times as needed.
Maintain mise en place for the pizza station, including prepping toppings, cheeses, and garnishes.
Follow portion control and plating standards for every order.
Keep work area clean, stocked, and organized during service.
Adhere to food safety and sanitation guidelines at all times.
Assist in receiving and storing deliveries, ensuring product quality and proper storage.
Communicate with the kitchen team to ensure smooth service and timely orders.
Requirements:
Previous experience as a Pizzaiolo, Pizza Cook, or similar role in a professional kitchen.
Strong knowledge of dough fermentation, shaping, and baking techniques.
Ability to work quickly and maintain quality during high-volume service.
Understanding of different pizza styles (Neapolitan, New York, Roman, etc.).
Physical stamina to stand for long periods and work near high heat.
Flexible schedule availability, including nights, weekends, and holidays.
Preferred Skills:
Experience with wood-fired or specialty ovens.
