Position Description
The primary purpose of the Food Service Director is to plan, organize, develop and direct the overall operation of the Dietary Department in accordance with current federal, state, and local standards, guidelines and regulations governing the facility and as directed by the Administrator to assure that quality nutritional services are provided on a daily basis. Ensure that the department is maintained in a clean, safe, and sanitary manner.
Duties and Responsibilities
- Work together with Registered Dietitian(s) and other staff members of the interdisciplinary team to provide quality & safe nutritional care for all residents.
- In charge of planning, developing, organizing, implementing, evaluating and directing the Dietary Department, its programs services, day to day functions, and policies and procedures to maintain the department in regulatory compliance.
- Implement menus with appropriate modifications that meet individual nutritional needs in accordance with national/ state guidelines for portion size and nutrition, as well as resident preference.
- Identify food customs and preferences based on race, culture, religion, texture, and food intolerances/allergies.
- Oversee tray line/meal distribution of therapeutic diets and nutritional supplements to ensure accuracy, timeliness, and resident satisfaction. Participate in resident council meetings to gather meal feedback from residents, maintain an adequate liaison with families and residents as necessary.
- Participate in and complete all surveys and audits relevant to nutrition and dietary service. Develop corrective action plans to address deficiencies resulting from state surveys/ audits.
Qualifications
- Must be a CDM, registered dietician, a certified dietician/technician or equivalent.
- Must have 3-5 years managing a food service department in a healthcare environment.
- Knowledge of local and state health and sanitation and safety codes
- Knowledge of food handling, preparation, service and operation of all kitchen equipment
- ServSafe certified; and ServSafe Allergens certification recommended.
